I decided to take today off after a week of too much work. I can easily get caught up in what’s next and sometimes I need to hit the breaks to remind myself how to slow down and focus on the joy all around me. .

I had an hour to kill and a good parking spot at school after volunteering in M’s classroom so I decided to walk home, do a load of laundry and walk back instead. The air quality today is pretty poor and is just another great reminder of how dynamic and precious life is. .

Ingredients:
- 1 scoop @whitewolfnutrition smooth chocolate protein
- 3/4 cup almond meal
- 2 tbs cacao
- 2 tbs coconut flour
- 1/2 tsp baking powder
- 1 small banana, mashed
- 1/2 banana thinly sliced.
- 2 tbs cacao nibs
- 2 eggs
- 3 tbs vanilla @yoproau (or simply use natural greek yogurt)
- 1/2 cup milk of your choice

Method:
1. Preheat oven to 160 degrees fan forced.
2. Combine almond meal, cacao, coconut flour, protein and baking powder in a mixing bowl.
3. In a separate bowl whisk eggs, banana, yogurt and milk together. Add into dry mixture and stir until well combined.
4. Pour evenly into lightly greased muffin tray. Top each muffin with a slice of banana and a sprinkle of cacao nibs.
5. Bake in oven for 25-30 minutes.
