Aaand the cold soba salad craze continues this summer in the kitchen....this is my variation of the Japanese dish “Hiyashi Chuka”, which is a cold ramen dish. I used soba noodle instead, and added Black Forest ham from @traderjoes , Persian cucumber, pearl tomatoes, wakame, sliced thin omelette (beat 1 egg, cook on oiled pan, flip to cook other side, roll it up, and julienne it!), half a runny egg, and some unconventional yellow nectarines. Dressing is a combo of minced garlic, balsamic vinegar, soy sauce, sesame oil, and honey, which I mixed in with the noodles beforehand. Happy Friyay friends!
