Colombia Finca La Illusion from @slatecoffee .....
I've spent a few days with this one, and the more I make, the more I like it. I've had so many Colombian coffees in the past few months that it's sometimes hard to pick out the small differences. But sometimes, a couple will stand out as the Lucas Melo lots I reviewed. This Natural Caturra roasted(to perfection) in Seattle, WA stands out to me for sure. When I first opened the bag, the incredible aroma of the coffee filled the room, and the first(physical) thing I noticed was the light, almost caramel color of the beans. A good deal of Colombian coffees you'll find are a darker roast, and while there is a place for that, I simply prefer a light roast that allows for a cleaner, brighter cup. I definitely picked up on some citrus notes more on the side of orange and tangerine, with a warmer, smooth brown sugar sweetness. A subtle flavor I was not expecting, but was extremely accurate was banana. On the bag they list ripe banana as a note you'll pick up on, and they were right on the money. Overall, this was a fantastic, well rounded, almost velvety cup. Thank you @slatecoffee for a unique coffee experience.

•As always, it was brewed using a Chemex and water heated to 201°F.
