‘European hitchhike’ I’ve had a lot of fun participating in @homebarawards throughout 2018, & from my 5 entries was fortunate enough to place in that top 3 a couple of times which means I qualify for ‘Home bartender of the year’ alongside some other fantastic friends on this here Instagram. . The prize is pretty exciting...with the winning recipe finding its way onto the menu of the legendary @amoryamargo’s menu in NYC for two weeks after being judged by the legendary @creativedrunk . AyA is a stirred and bitter cocktail bar so my first submission is a negroni riff (well, technically a boulevardier) using a couple of legendary European ingredients. . I’m using spicy rye whiskey as my primary base and combining it with Tokaji Aszu (the wine/vermouth element of my negroni) which comes from the vineyards of North East Hungary. The grapes are picked in a state of advanced shrivelling from “noble rot”; after all ‘aszu’ means "dried berries". Tokaji (rhymes with Popeye) is one of the most unique / incredible wines varieties I’ve ever tasted...and understandably why demand continues to grow for it as a sweet dessert wine. . My primary bitter element is Becherovka, an amaro from the Czech Republic often drunk as a digestif. I find it to be quite a warming amaro with hints of ginger and spice. . Last but not least, a single dash of Abbott’s bitters cuts through the sweetness of the tokaji and pulls the elements together with a subtle woody bitterness....and don’t underestimate the power of the grapefruit peel for its oils, flavour and smell! 👃 — • 30ml Rye whiskey I’m using Rittenhouse • 30ml @royaltokaji tokaji • 30ml @becherovka_cz • 1 dash Abbott’s bitters I’m using @bobsbitters • grapefruit peel 👉 stir all ingredients with ice for around 45 seconds. Strain into glass over large clear ice cube. Run rim with grapefruit peel and add to glass. Enjoy. .
