I'm wary of superlatives, but this is a damn good bird. Worth ignoring the "skip the chicken" rule because you will crave this baby. Bone in, skin on, covered with jus, on a pedestal of fuffy, chewy, toothsome toasted bread. Soppin' good. But also, the Amatriciana pizza!!! And summer pizza!! Worth the trek, greater LA! Venture to the land of tall people. Seriously, there are A LOT of tall people in Manhattan Beach!!

I used coals instead of wood and did lift the cast iron few centimetres with a grate.
Then I did put more coals on the top 🤗😊 .

I haven’t had an American brunch in a while and coming to @eloise_nichols was so much fun. Highly recommend the chicken and waffles - the nuggets were very well seasoned and flavorful. The oysters were also very tasty - heads up: it does take about 15-20 minutes for them to shuck them fresh. Last but not least, the salmon toast was also delicious with lots of avocado slices underneath 🥑 .

The Mexican Powerbowl @TheFoodieBuilders

Chipotle is a pretty decent quick-lunch option, we dig it. But you know what’s even better? – Homemade chipotle type bowl aka The Mexican Powerbowl.

Why?, you ask. It offers total control over the ingredient list as well as the quantity of each; it’s more nutritious; everything is fresh and it doesn’t take much time either. Also, it’s way cheaper, makes 2-3 bowls at the price of 1 chipotle bowl. Needless to say, it’s very tasty.
So, don your chef hats, get creative, and save some cash.

𝐍𝐮𝐭𝐫𝐢𝐭𝐢𝐨𝐧 𝐈𝐧𝐟𝐨𝐫𝐦𝐚𝐭𝐢𝐨𝐧
Calories – 720
Protein – 70 g,
Carbs – 76 g,
Fat – 15 g,
Fiber – 18 g.

𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬
Chicken Breast – 200 g / 1 piece
Quinoa – 1 serving (swap for brown or white rice)
Avocado – ½ Sweet corn – ½ cup
Pico de Gallo- 2 Tbsp.
Spicy Salsa- 1 Tbsp.
Beans – ½ cup
Pepper mix – ½ cup.

All the ingredients are from Trader Joe’s; it’s hard to beat them. Also, consider buying corn and pepper mix frozen instead of fresh, they are cheaper and equally nutritious.
Feel free to make your own salsa and/or Pico de Gallo – it’s pretty simple (We’ll cover that in future posts).

𝐌𝐞𝐭𝐡𝐨𝐝
Season the chicken breast with salt, black pepper, garlic, parsley, and lime. Use a Panini maker to grill it (Lifehack!), takes about 5-8 minutes.
In the meantime, cook 1 serving of quinoa or rice in an open pan on a stove or microwave.
Thaw the corn and pepper mix, if using frozen.
Once ready throw these in a bowl along with avocado, some beans, spicy salsa, and Pico de Gallo.
You’re all set!
