Spiced breakfast jars
A creamy, dreamy dessert-inspired overnight chia-oats in rice milk flavored with homemade aromatic spice and toasted nuts. .
1/2 cup unsalted pistachios
1/2 cup unsalted almonds
1/4 cup unsalted cashews
2/4 tsp ground nutmeg
2 tbsp ground cardamom
1/4 tsp ground pepper
1 tsp saffron .
Heat a skillet and add the unsalted nuts and dry toast them for about / minutes, stirring frequently
Once they are toasted, turn off heat, transfer to a plate and let cool
Add the saffron strands to the same hot pan and toast (no need to turn the heat back on) and toast for about a minute
Transfer to the plate with the nuts
Once the nuts have cooled, add the nuts, saffron and ground spices to a dry spice grinder and grind to a fine powder
Set aside or transfer to an air tight jar for use at a later time
For the overnight oats (makes 2 large jars)
1/2 cup old fashioned oats
2 tbsp cup chia seeds
3/4 cup dairy rice milk
3/4 cup water
Liquid sweetener (I used 1 tbsp maple syrup)
4-5 tsp of spice mix
A few tsp of coarsely chopped pistachios .
Mix the old fashioned oats and chia seeds with dairy free milk and water and stir well every 5 minutes for about 15 minutes. Refrigerate for at least 45 minutes or overnight.
Before serving, add sweetener, about 2 tsp spice blend per jar, mix well and top with toasted pistachios. .
