I tried Meringue desserts many years ago when I was not own a Stand Mixer. It failed miserably, of course, a good laugh from everyone at the kitchen including myself. And I shy away many desserts involved Meringue since. Now that I finally owned a Stand Mixer, I baked many Austrian Nockerl for my guests. All standing tall and proud just like the Austrian alps.
This is second Meringue desserts I have just created...strange that it was crispy and looking happy awhile ago, but it turned soft and sticky the next minute...then I realised I need to keep it in a jar after the meringue have cooled down. My two Cookbooks didn't say that. I almost give up after the first attempt, it was not 'all white' I wanted...then I tried again after my guests left, by the time it cooled down, it was 2.30am. ~ Meringue Cranberry Quadrotto ( Dark Chocolate Ouadrotto imported from Italy)
