. I find it hard to pick a favourite food these days, but in a previous life, they were very specific, depending on the food category. .
This meal however, has topped my list since childhood, and has remained there through all my lifestyle changes. Sugar beans are probs my favourite legumes because when you cook them long enough, some of them melt into a creamy dream that forms the basis of your curry or bredie. If you're hesitant about trying legumes, I highly recommend this one. Remember to soak them beforehand, and boil in plain water (no salt, but aromatics are good, eg. bay leaves, fresh garlic) until soft. Then add seasoning, salt, onion, etc. .
I'd serve this sugar bean curry with homemade, oil-free, wholemeal rotis (which turned out really well ), avo to neutralise the spiciness, and coriander for a burst of flavour and freshness. YUM! Comfort food .
