Perfect snack for the day! Regular and purple potatoes filled with a list vitamins and minerals not to mention great source of antioxidants. Potatoes can help heal chronic illness as well so I'm trying my best to incorporate them into my diet as much as I can. It doesnt look like a hearty meal but it sure is when it comes to nutrients and is just as filling. I baked them with a spritz of coconut oil for 40 minutes in the oven and voila! Side of guacamole, just avocado, lemon, and salt. And for a side, I made myself a blueberry, spinach, mango, and apple smoothie with both coconut water and unsweetened coconut milk!
