Sorry, but every meal doesn't need to be #instagramworthy. This is my reality and I'm sure it's your reality, too.

Most days, I'm all about keeping my meals as simple as possible.  Especially with an infant, who has time to be spending hours in the kitchen, while lusting over some overly complicated recipe that you lingered upon on Pinterest? I was just as guilty as the rest of you. 🤷🏽‍♀️
.
To make things easy for myself, I avoid overcomplicating the process by making sure that each meal is ....
.
1 ◻ Simple to make and ..
2 ◻ Nutritionally sound (lots of veggies and fiber, including some of my favorite sources of protein and fat).
.
This week's lunch consisted of chickpea pasta, some tricolor cauliflower (I mean look at those colors?! 💙💚💛), sweet peas, kidney beans, 1/3 of an avocado, a dash of olive oil (added to the pasta after steaming), and then I topped it all off with @traderjoes everything but the bagel seasoning and a sprinkle of dulse flakes.
.
I add this superfood to just about everything! It's an ancient red algae that is densely packed with vitamins, minerals, protein, antioxidants, and fiber. And it has a bit of a salty kick to it, which I love. Some might call it an acquired taste, but it's all about coming back to the nutritious foods that you love.

🌟 2 min VEGGIE BROTH 🌟 Bone broth is a magical liquid, it's true. But I know it's not every day you have the bones needed to make it, so veggie broth is an easy substitute and still packs amazing vitamins, minerals, and immune boosting goodness. Give it a try for #MakeYourOwnMonday. This is especially magical for #postpartum moms. Make it and freeze it in advance for yourself or whip some up for a friend who is expecting soon!

Simply keep a bag of veggie ends and bits from cooking/your fridge in your freezer and add to it as you cook throughout the week(s), instead of tossing those leftovers/ends in the green bin. If that's not your style and you're more a recipe person, you can make an amazing broth by adding:
⭐️
1 onion, peeled and quartered
5 garlic cloves, peeled
1 zucchini, roughly chopped
2 carrots, roughly chopped
1 celery stock, roughly chopped.
a couple handfuls fresh herbs (parsley, thyme)
big pinch pepper
1/4 tsp turmeric powder
a tbsp of dried goji berries, for extra immune boosting⭐️

Whichever method you choose, just put all veggies in a pot or slow cooker, cover with water, and simmer for a few hours or all day. If you've got bones, simply add them and 1 tbsp apple cider vinegar. Use in soups, as a base for cooking, or drink warm in a mug (great for kiddos too who may not love soup!).

90 days progress! 21 lbs gone and 19" lost. "A little better everyday".

Seriously??? I've fought this same battle for 30 years... Failing time after time after time. I wouldn't say it's easier, but what I will say is that I've learned a lot and I've FINALLY learned it truly has to be a lifestyle to get it off and to keep it off. I post my pictures to encourage others to take this journey with me, knowing for a fact in order to continue transforming my body, preventing disease and keeping my hormones balanced that I will ALWAYS have to live a healthy lifestyle. Which for me means:
1. Daily time with my Creator
2. Daily Movement

Apples have been shown to do a few positive things for our health

They are loaded with B vitamins, vit A & C, potassium & potassium. Apples contain pectin; a type of soluble fiber that can lower blood pressure, glucose levels & lower LDL (“bad”) cholesterol levels

Although we can get apples all year round, I think they taste the best when they are in season

🍠🍕🍃This was a fun little experiment I made with my friends. It’s a sweet potato pizza crust with mushrooms cooked in a tomato/truffle sauce, topped with cashew cheese and arugula. The flavors were super delicious, but the crust didn’t hold together as well as my previous potato pizza. Will continue experimenting with this one and post an update with recipe when I have a successful formula. 🍠🍕🍃

✨GINGER✨
Such a common, delicious, and versatile root. We all know it’s wonderful for nausea due to morning sickness and chemo, but it also had a bunch of other great properties. It is anti-inflammatory and can reduce muscle pain and soreness as well as osteoarthritis. Ginger is great for heart health and blood sugar regulation, is awesome for indigestion, and can even help reduce period pain. Studies show ginger can also reduce risks of cancer, alzheimer’s, reduce cholesterol, and even fight infections.
I love putting ginger in stir fries with garlic and making it into tea by boiling chunks of the fresh root.
In chinese medicine ginger root is great for warming up the spleen yang (for digestion) and releasing wind cold (aka the common cold). The only times you want to avoid ginger is when you are feeling hot and feverish with a sore throat, or tend towards heat and inflammation in general.👌
