Dinner is served!
Grilled cilantro-lime tofu, mushrooms and zucchini (yes, it looks like pineapple but it's actually slices of a massive zucchini from my aunt's garden), and toasted whole grain bread. Yummy!

I love tofu, it's a plant-based protein and so versatile! Tofu was also a regular staple growing up in my Chinese household. My grandma would stir-fry, steam, and occasionally fry tofu. Tofu easily picks up marinades really well and there's so many varieties to match your cooking needs (soft tofu for soups and smoothie, firm tofu for baking and stir-frying and flavoured tofu for just enjoying right away). This is the first time I've grilled tofu and I found to be a bit dry, I'll have to make some modifications next time.

I love summer produce for all the meal inspiration is provides. Lemon pesto zoodles topped with lemon dill grilled salmon is the perfect summer supper. ———————————————
Recipe (serves two):
Two salmon fillets, topped with fresh dill and 2-3 thin slices of lemon, then grilled until tender, about 7-9 minutes. —— Zoodles: spiralize two medium zucchini on the thick setting, sauté with a little 🥑 oil until they start to soften, about 8 to 10 minutes, add the juice of half a 🍋 and 1/4 c pesto (homemade or store bought works great). Trying to pack to move, sleep train an 8 month old, and pMSing (sorry for over share it’s female reality) are very stressful and would normally have me reaching for prepackaged easy junk food like frozen pizza. However, even though we are super busy, I’m trying to make a concerted effort to still have us eat healthy as best as I possibly can. Cooking has gone from being a chore to cathartic for me in this house, and I’m going to enjoy making every last meal I can in this kitchen when I only have 8 days left here. Seeing the house emptying out is hard, but I’m trying to think happy thoughts like how I will organize my new kitchen, decorating for Halloween, and what theme I will choose for Wyatt’s first birthday (even though it’s still a long way off). Back to the salad though I wanted something healthy, but filling so I grilled chicken in my ridged cast iron skillet & roasted asparagus and put it on a bed of spring mix topped with avocado, boiled egg, crumbled bacon, golden cherry tomatoes, cucumbers, & feta. Very filling & satisfying. Maybe my favorite salad I’ve ever made & was definitely a hit with the hubby. 🥒🥑🥗

Made some crispy beef with brown rice. Not as crispy as I’d have liked but since it was my first attempt, I’m just so glad it tasted great!

D I Y deodorant .. because who really wants to be loading up their pits with all that toxic junk anyway!?

Why Lime?

It’s antiseptic, an antioxidant, antibacterial, detoxifier, disinfectant .. and it uplifts mood.

Your deodorant does all that, right?

Oh .. well then follow this recipe.

➕2 tbsp coconut oil
➕1 tbsp baking soda (sodium bicarbonate)
➕3 tbsp arrowroot powder
➕5 drops lime essential oil

Now, this is the tricky part, so pay attention.

Combine all ingredients.

I’m serious. Don’t mess this up, people.

To use, scoop about 1/4 tsp and apply to underarms.

Boom! 👋🏼 Later, stink pits!

When it’s Grandma’s recipe, it has to be served in Grandma’s way... no sophisticated presentation yet lots of flavors and love are in ☝🏼
Chicken and potato casserole:
Ingredients:
1 whole chicken, skin removed, cut into pieces
1/2 kilo gram potatoes, cut into cubes
4 TBS white vinegar
2 TBS olive oil
1-2 bay leaves
A pinch of salt, black pepper, and white pepper
Water/chicken broth to cover all
Preparation:
Mix the everything together
Let them boil on oven top then transfer into preheated oven (170 degrees celsius) and allow to cook completely
Brown the top a little (if there's so much water left allow it to evaporate but not completely) .

New recipe day! It’s been a long time (like years) since I’ve posted a new recipe for homemade energy bars but that doesn’t mean I haven’t been making them! Here’s a current fav made with just three simple ingredients: Cherry Almond Energy Bars. Recipe down below and on the blog.

Ingredients:
2 cups dates (pitted)
1 cups dried bing cherries
1 cups dry roasted unsalted almonds
.
Directions:
Place everything in a food processor and pulse until almonds and dried fruit have formed a meal and can be easily squeezed into a lil’ ball. If it’s too dry/crumbly, add a few more cherries and pulse.
Pour mixture out onto a piece of parchment paper and fold paper to cover the top. Roll the “dough” out in a flat rectangle with your hands or a rolling pin.
Slice into desired sizes — I was able to cut into about 12 1″x1″ squares. Enjoy!

المقادير:
- ٢ ملعقة طعام خميرة - ٢ كوب ماء فاتر
- ٢ ملعقة صغيرة سكر
- ١ كوب طحين شوفان
- ١.٥ كوب طحين قمح كامل
- ٢ كوب طحين أبيض
- ٢ ملعقة طعام زيت زيتون
- رشة ملح
طريقة التحضير:
- منخلط الخميرة مع الماء مع ملعقة سكر ومنتركها ٥ دقائق.
- منخلط طحين الشوفان، القمح الكامل و ١ ١/٢ كوب طحين أبيض، مع الملح وباقي السكر.
- منضيف الخميرة والزيت ومنعجن يدوياً أو بالخلاط
- لما تتماسك العجينة منزيد ١/٢ كوب طحين الباقي ومنعجن حتى تصير ناشفة.
- مندهن جاط بملعقة زيت صغيرة، منقلّب العجينة، ومنتركها ساعة حتى ترتاح.

Canned fish (salmon/tuna) is an underrated, excellent source of protein and omega-3 fats (brain health!). Add siracha, lemon juice, or black pepper to easily cut the fishiness.

Fast Food Mini Meal Prep - small batch style

Tool highlight:

Convenient complete mini meals on the go. Can be eaten straight from the fridge or heated with additional ingredients seasonings or sauces to make a larger meal.

Small batch shopping tip:
Frozen veggies now come in very small bags intended for microwave steaming. These smaller bags usually contain two to four servings per bag and go on sale often. When they do grab a few different ones to use for your meal that week.

In a hurry:
No need to thaw smaller frozen veggies whole grains or beans like rice quinoa lentils beans riced-veggies etc. Just add them to the container frozen along with your other precooked ingredients them add lids and store in the fridge for up to a week.

Bonus:
Meals can be prepped and frozen to extend shelf life. Take out one mini meal at a time and microwave or move a number of meals to the fridge for later in the day or week!

Healthy treats 🍰🍫

Homemade oat and banana cookies: .

You’ll need:
- 2 ripe bananas - 2 eggs
- 100g oats
- tbs cinnamon - cacao nibs
- raspberries - chia seeds - coconut sugar .
.
Pre heat oven to 160
1) mash up your 🍌s
2) mix in your eggs
3) add the oats, cinnamon cacao nibs and coconut sugar.
- mix until really thick, add more oats if need be.
4) make into little bowls and flatten into cookies!
Bake for 15-20 mins.

I also heated some raspberries with chia seeds to add to a couple, you can pretty much add anything you want to the mix....dates, blueberries, coconut or even protein powder!

Now that the sweltering summer heat has settled in my basic one ingredient nice cream is in heavy rotation. I confess. Sometimes my nice cream gets a little naughty🙊.

Crunchy protein bar

Why this works:
The crunchy protein bar adds a protein rich rice crispy texture without changing the silky sherbet like texture of the nice cream.

Small batch grocery tip:
Protein bars are a bit pricey and some half as many calories as a small meal. No worries! Just cut the bar in 1/2 or even 1/3s to save money and calories.

Ingredient swap don't:
Don't swap protein powder for the crunchy protein bar. Protein powder will make the nice cream fluffy rather than silky. 🍦
Don't swap a thick solid protein bar for the crunchy one. The denseness of a thick solid one texture bar will make the nice cream gummy.

Here 1/2 a BSN salted toffee pretzel bar was added to frozen strawberries and blended.

We are going through our 11lbs of freshly picked blueberries quickly! We are more than half way through and it's only been 1 week since we picked them. Blueberries are truly nature's candy!

Here's my latest delicious double berry concotion for #toasttuesday. Toasted whole grain bread + my friends' delicious homemade blueberry jam + fresh blueberries + crumbled jalapeno Monterey Jack cheese.

I usually don't like jam but my friends' homemade jam was too good to pass off! I love the spicy and savoury addition of the cheese to balance the sweetness of the berries.

Dinner the other night 🥘 PT. 2/2...
~Cook the broccoli rabe in salted water until stems are soft, remove, reserving some of the salted water...
-in same pan, heat olive oil, garlic slivers, salt, pepper, and crushed red pepper until garlic is golden, then add the broccoli rabe back in the pan w a little reserved water.
~In a large bowl, add sliced strawberries, blackberries, raspberries, and blueberries, St. Germain liquor, turbinado sugar, lemon zest and let macerate at least 20 minutes in the refrigerator
***Serve alone or with melted vanilla ice cream with almond slivers. 🤤😋 Comfort food, loaded with flavor, a perfect Sunday meal! Yum!😊🤗

Dinner the other night 🥘 PT. 1/2...
~Chicken cutlets marinated in eggs, Parmesan, garlic powder, salt/pepper for about a half an hour. Put into Panko&breadcrumbs, Parmesan, garlic powder, salt/pepper. Fry in olive oil, a squeeze of lemon. Parsley when removed!
~Sautéed red onion, garlic, chopped Portobello mushrooms in ghee and evoo, adding salt/pepper, nutmeg, purple Mrs. Dash, thyme. When mushrooms are soft, add marscapone to create a sauce. -Cook fettuccine noodles, add them to the sauce with some of the pasta water, add more nutmeg, pink peppercorns and grated Parmesan.

~Salad 🥗 with: -Rotisserie chicken from Costco shredded & warmed, beets, onion, tomato, avocado, garlic-herb goat cheese, protein greens, Bibb lettuce
- This quinoa/brown rice ( I added/ sautéed in evoo, onion, garlic, tomato, spinach, s, p, purple Mrs. Dash)
-This Bragg’s dressing I found in Publix (too pungent alone) but I added some of this mustard (champagne /dill...Home Goods)
-Diced red onion, garlic, s, p, purple Mrs. Dash
-Aaaand a drop of this blood orange evoo I found in Home Goods ~~Mix everything in a large bowl and...all I can say is delicious! 🤤🤗
