START THE WEEKEND ☀️ with this freezing cold RAW SALTED CARAMEL SLICE! It will be sure to cool you down and satisfy those sweet cravings 🍫🍩🍭. The full recipe is below 👇🏽👇🏽👇🏽 HAPPY FRIDAY EVERYONE 😘😘
INGREDIENTS:
BASE:
1/2 C desiccated coconut
1/2 C almond meal
1/4 C natural cashew nuts
1/4 C hemp seeds
8 dried dates, pitted + soaked
3 tbsp coconut oil (melted)
1 tbsp honey
A pinch of pink Himalayan salt
FILLING:
1/2 C 100% natural almond butter
1/4 C natural cashew nuts (soaked)
1/4 C coconut sugar
1/2 C coconut oil (melted)
1/2 C non-dairy milk of choice (almond, oat, coconut, rice milks etc)
1 tsp cinnamon
1 tsp vanilla extract
2 tbsp honey
A pinch of pink Himalayan salt
TOPPING:
1/2 C coconut oil (melted)
1/2 C cacao powder
2 tbsp honey
METHOD:
1. Line a high edged baking tray (30cm x 20cm) with baking paper.
2. For the base, place all of the ingredients into a food processor. Blitz until all of the ingredients are a crumb like consistency. Press into the prepared tray and place in the freezer whilst you prepare the filling.
3. For the filling, place all of the ingredients in the food processor and blitz everything until it is really smooth (3-4 minutes). Remove the tray from the freezer, pour over the caramel mixture and return to the freezer to firm up for 30 minutes.
4. For the topping, place all of the ingredients in the food processor and blend until really smooth and chocolatey. Remove the tray from the freezer, pour over the topping spreading it evenly over the slice. Return the tray to the freezer for at least 45 minutes before serving.
5. To serve, cut into squares.
NOTES:
1. No need to wash the food processor in between making the base, filling and topping (yay!).
2. Store the slice in the freezer. Don’t worry, it won’t go rock hard.
3. @aldiaustralia sell a good and cheap 100% natural almond butter for $4.99 a jar (you’ll only need half the jar, so you’ll have enough to make the slice again!).
4. If hemp seeds aren’t a staple in your pantry, you can replace the hemp seeds with extra desiccated coconut.

Oi sumidos!!! 👋🏻 Pra quem viu meus stories recentemente sabe que meu sumiço tem uma explicação razoável né?! 🤰

Mas, como eu disse, estou voltando aos pouquinhos pra cozinha e, em homenagem ao meu retorno, vou fazer um #tbt com a receita desse Snickers #vegano e #raw super fácil de fazer, que aprendi na minha temporada em Bali 🇮🇩 ❤️

Para a base de baunilha:
Processe no multiprocessador 1 e 3/4 de xic de amêndoas trituradas, 2CS de tâmaras picadas, e 1Ccha de extrato de baunilha até ficar homogêneo. Em seguida acrescente 4CS de óleo de coco, processe de novo apenas para misturar.
Despeje essa mistura em um refratário de 10x20cm, untado com óleo e coberto com papel manteiga. Leve ao freezer enquanto prepara o caramelo.

Para o caramelo: no multiprocessador bata até ficar um creme macio 1 xic de tâmaras picadas e pré hidratadas em água por 30min, 4CS de óleo de coco, 2CS de tahini, 3CS de melado, 1Ccha de extrato de baunilha, 1/2Ccha de sal e 8 gotas de extrato de caramelo. Acrescente 1xic de nozes picadas e misture com uma colher. Despeje essa mistura sobre a base de baunilha (já endurecida), e leve ao freezer por mais 2h.

Corte em pedaços depois mergulhe-os no chocolate derretido e leve à geladeira para firmar!

🔸Pecan Biscuit
.
~ 100g ( ¾ cup ) buckwheat, soaked 1 hour, sprouted 8-12 hours
~ 100g ( ¾ cup ) pecans, soaked 8 hours, strained and rinsed
~ 75g ( ⅓ cup ) coconut sugar, powdered
~ 10g ( 1 tbsp ) coconut flour
~ 4-6 drops vanilla Medicine Flower Extract or ¼ tsp vanilla extract
~ Pinch sea salt

Combine all ingredients in a food processor and pulse to combine and break down.We want some texture left in the nuts, but not for it to be too chunky as we need to spread them out.
Transfer the mix to a teflex sheet and spread out using a cranked/offset spatula to about ⅓ inch thickness.
.
Score into small rounds using a cutter from a round cutter set that will fit the sphere mould you are using.This is the one I used.
.
Dehydrate at 115 for 10 hours, flip onto mesh and dry an additional 10 hours or until crisp.
Once cool, gently break the rounds along the score lines.

🔸Nutmeg Ganache
.
~ 35g ( ¼ cup ) pecan butter
~ 90g ( scant ½ cup ) water (warm)
~ 80g ( 2.8 oz ) cacao paste
~ 50g ( ¼ cup ) coconut sugar
~ ¼ tsp freshly grated nutmeg
~ ¼ tsp sea salt
~ ½ tsp tamari ( optional for added depth )

It’s important the water is warm / hot and the chocolate is shaved before you start this recipe.
The liquid being hot and the chocolate being shaved will mean that the mixture melts very quickly and can properly emulsify in the blender..."> (continue on the link below)

GOLDEN MYLK Bliss Balls ✨✨
Who wants one (or 10)?!
Turmeric is powerful af and these little raw power balls are packed full of it. It’s anti-inflammatory, so great for fighting off illness/disease and full of antioxidants too!
Not gonna lie, I eyeball the ingredients I blend up, so I don’t have a full-on recipe for ya 😅 but general ingredients are as follows:
- around 10 medjool dates
- 1/4 cup oats
- 1/4 cup ground almonds
- 2 tsp tahini
- 1 tsp turmeric powder
- 1/2 tsp maca powder
- a dash of cinnamon - a pinch of salt
Roll into balls and put in the fridge for a few hours before devouring them with a mug of warm golden mylk. Also don’t forget to add a pinch of black pepper for increased absorption of turmeric (enhances curcumin absorption by up to 2,000%!!!) 👅
