Dessert for breakfast ~ carrot cake oats with cream cheese drizzle 🥕🎂 This cozy bowl might be my new fall go-to 🙃
How to make:
Soak 1/2 cup steel cut oats in 1/2 cup water overnight.
In the morning, transfer the whole thing to a pot & add 3/4 cup milk (I used @nuttylife cashew milk), let cook on low for 10 minutes, stirring often.
Once it starts to thicken, add 1 shredded carrot, 1 tbsp cinnamon, 1/2 tsp vanilla extract, pinch of cloves, 1 tsp maple syrup (optional). Stir everything together.
Top with cream cheese drizzle (combine 1 tbsp cream cheese [I used @kitehillfoods] & 1/4 cup kefir), banana, pecans, pumpkin seeds & cinnamon!
