It’s going to be stinking hot in Melbourne this coming week so I thought I’d share a super quick, easy meal for hot days.
Coconut rice. We are massive fans of it here. If you cook and cool medium grain white rice (I always buy organic rice) it becomes prebiotic food which means it becomes food for the good guys in your gut. You can reheat it again after it cools and it still stays prebiotic 👌
To make the coconut rice I just add a can of coconut cream in with rice as it cooks. I make it in my Bellini (poor man’s Thermomix) but it would be same in rice cooker or on stove.
I them pimp the rice with dulse & nori flakes, sesame seeds, bone broth powder & a good splash of MCT oil.
Then I add salad, with heaps of avocado, homemade sauerkraut & some tuna. Then top with hemp seeds.
Sometimes I’ll add some activated nuts & seeds (walnuts, almonds, cashews, pepitas, sunflower seeds...) for extra crunch or for protein instead of tuna.
Simple, easy, oven free dinner.
My kids love this dinner. They aren’t usually keen on salads but with coconut rice I can even get Miss 8 eating avocado by selling it as deconstructed avocado sushi 👌
