OH. OH, THIS MEZCAL. I AM RUINED!
I have loved mezcal for a long time, but I have always bought mezcals to use for mixing (Del Maguey Vida being my go-to, although I've tried a few others), and I like them! A lot! But tasting the @delmagueymezcal Chichicapa blew my everloving mind (and I am terrified to think what the next leap in price/quality might taste like 😬).
This Chichicapa is just freaking everything. Exuberant bright citrus and sun-warmed stones, velvety smoke and sweet fruit, spiky green peppercorns and dusty wild herbs. It is so glorious I am completely beside myself. And for a 92 proof booze, it is surprisingly drinkable and delicious neat. 🤤
As with other beautiful, quality spirits, I was a little hesitant to mix with this already-perfect-in-pure-form liquid, although I know it's done all the time. I wanted to find the perfect drink to showcase its many virtues, and my mind went to grapefruit and sage and salt, which I thought would beautifully mirror some of its inherent qualities--that bright burst of citrus and that earthy/resin-y herbaceousness. It was a good call: this is one of the most delicious drinks I've had in a long, long time--and that's saying something.
2 oz @delmaguey Chichicapa mezcal
1/2 oz @giffardusa Pamplemousse grapefruit liqueur
3/4 oz fresh pink grapefruit juice
1/2 oz lime juice
1/2 oz salted sage-honey syrup*
expressed grapefruit peel
*simmer a good handful of fresh sage leaves for a five minutes with 1/2 cup water and 1/4 cup sugar. Turn off heat and add 1/4 cup honey and ~1/8 tsp. salt. Let sit awhile and strain.
