A tofu or two that melts the kids hearts.
.
. 🍲 MAPO TOFU 🍲
Soft Jap tofu (bought from Aoen supermarket)
1 pcs med black fungus, copped
40-50g beef, minced 🥩
Chopped garlic
Half thumb size ginger, sliced
Soya sauce
1 tbs miso
2 tbs flour
2 stalks small broccoli (just the stalk), chopped 🥦
Large leeks, cut small
1-2 tbs honey
1-2 tbs teriyaki sauce
1-2 tbs Jap Bull-Dog sauce
2-3 cups of water
2 tbs olive oil
Salt, pepper
(To add next time: shitake slices)

Stir fry garlic and ginger with olive oil till aromatic, put in the broccoli stalks, cook till softened. Put in the minced meat (I added a little water into the meat bowl so that it got separated), cook till it turned brown. Put in the flour, mix well and cook it. Add in the salt, pepper, honey, teriyaki, Bull-Dog, soya. Taste it. Add water, simmer till water is reduced. Put in leeks. Add the miso and mix well, quickly add the tofu. Taste for final, don’t stir the tofu too much to avoid it breaking apart. Wait till boiling. Off the heat.

I like my kids to eat healthy yet yummy. Snacks like these are what I aspire to always create for them. It's tasty, healthy and also desired by adults 👅💦I had been imagining that I could entirely bake things like bakwan/perkedel jagung (corn fritters), perkedel kentang (potato fritters), bakwan sayur (veggie fritters), all these old fashioned home snacks which were mostly fried (some were deep fried!) but never had the courage to actually try it out. Today was the day. And it was an excellent decision 💯Fritters were less oily, it was also less of a hassle to do it cos I only needed to lay out the batter on the pan (almost entire batter) and put them in the oven, instead waiting for each scoop to fry out on the frying pan. 👏🏼👏🏼👏🏼👏🏼 Baked Corn Fritters (Gluten Free) 🌽 aka Bakwan Jagung 📝 🌽 🌽 🌽 🌽 📝
2 corn cobs, combed. I mixed: half was blended fine with a little water, half was blended in chunks.
1/4 med size onion, minced.
2 tbs minced corriander leaves.
5 shallots, minced.
3 garlic, minced.
3 tbs oatmeal flour.
3 med eggs.
2 tbs chopped leeks.
3 tbs flaxseed meal.
3 tbs chia seeds.
2 tbs almond powder.
Salt, pepper.
1 tbs olive oil.
🥘🥘🥘🥘🥘🥘
Stir fry first: garlic, shallots, onion, leeks, corriander leaves till aromatic and soft. Mix all the other ingredients in a big bowl. Put in the cooked garlic etc. Mix well. Prep pans with wax paper, layer with a bit of olive oil. Heat oven at 180C. Scoop dough with small soup laddle, same serving each time. Bake in the center shelf of the oven, 1 side for 15mins. Turn all the fritters, bake for another 10mins till cooked (check the center piece whether it is cooked well).

So my daughter is not the biggest veggie eater. She loves her fruit though. So I have been searching for ways to get her to eat more veggies. So I made these pea and spinach mini crumpets. So easy to make and great to freeze for later use. They went down a treat and she absolutely loved it.
Recipe: 1 cup of cooked peas, 1 cup of baby spinach, 1 cup of flour, 1 egg, 1/2 cup of milk and a pinch of salt. Recipe for my super crispy oatmeal cookies! ✌🏻👇🏻 It’s so good! I am sure you and your little one will love it, too! ❤️😋

🎯Ingredients (services: 10 pieces)
.
15g butter
30g light brown sugar
60g rolled oats
20g tablespoons all-purpose flour
tiny pinch of salt
1 egg white, lightly beaten
.
🎯Instructions
1. Preheat oven to 150C. Line baking sheets with parchment paper or silicon baking mats. Set aside.
.
2. Heat butter and brown sugar in a saucepan over medium heat, stirring frequently, until butter has melted and mixture is smooth. Stir in oats, flour, salt, egg. .
.
3. Refrigerator the mixture at least 30 mins or overnight. .
.
4. Drop cookie batter by the teaspoon onto prepared baking sheets, leaving at least 2 inches between each cookie to allow them to spread. .
.
5. Use your finger to dip some water that can help to spread the cookie batter thinner.
.
6. Bake for 15 minutes, watching closely to prevent them from over-baking. The cookies should be golden brown.
.
7. Cool the baked cookies thoroughly. Layer cookies between pieces of parchment of waxed paper and place into an airtight container. These cookies should keep up to 2 weeks.

A #toddlers lunch can be interesting most days & sometimes what we make for them can be a "no no" in their eyes😒 my toddler has been a handful for a while with any meal. So today I decided to ask him what he wanted for lunch... well it got messy, weird & became a variety of different foods. It was organic apples, my home made #matcha protein #amazeballs , cherry tomatoes, sliced almonds and shell pasta. (Shell pasta not included in this photo as they were cooking at the time of this photo😬) . We also had a nice cold/flu herbal tea to kill off this ridiculous cold/flu my toddler has picked up on the weekend. His on the mend today which is fantastic to see that he has finally got his appetite back☺️ I so miss him being healthy and back to normal. We all hate seeing our little ones un well.
On another thought, a toddlers lunch choice makes me wonder about what their body is asking for and why... each of these food items have different nutrients. So my son must be low in vitamin C, fibre, carbs, sugar, vitamin B-6 and vitamin A, magnesium and antioxidants! He obviously needed a good hit of each nutrient to help his body fight this cold/flu.
