Have honestly not been feeling super inspired or creative lately, but it will pass as it always does. Here's a photo of tonight's lovely dinner. I baked a whole head of cauliflower brushed with herbs, spices, nooch and EVOO for about an hour and a half and it was melt-in-your-mouth delicious! Added cubed Yukon Gold potatoes during the last half hour and they were perfectly crisp and creamy. 馃憣Paired with a skillet of sauteed cremini mushrooms and red onion, cherry tomatoes, a mix of spinach and arugula and avo. Hope y'all have a wonderful Monday night. 馃挌

I have been thinking about an ~earth day~ post for much of today, beyond the 鈥渉ey u should love the earth!鈥 No harm in saying that, but loving the earth should mean trying to protect it. Whenever I have my reusable utensils or cup or whatever, at least one person tells me 鈥渄o you really think one straw/fork/cup will make a difference?鈥 And honestly, the singular straw will not, but 100 straws will. And I think people lose the ability to see how their individual actions impact the environment because it can seem like an overwhelming goal. But collective small actions do make a difference; you don鈥檛 have to be zero waste or vegan or whatever to make a small change. Like maybe tomorrow you chill with the plastic cups or eat plant based for a day. Anywho just my questions, comments, and concerns.... this has gone on for way too long.....happy earth day ladies 馃挌馃グ馃挌 also shoutout Tanya I love u Tanya

This one definitely does not look pretty, but I've been craving it for days. Newfie mustard salad with ham. Took a picture just for the sake of it, but it's definitely not a flattering one.

This was one of my all time favourite foods growing up, and still is. I used to always take my salad and then wrap it in ham to make little rolls and eat it like a taco. I havent had it with ham since going vegetarian 3+ years ago. .
I subbed regular mayo for vegan mayo, and ham for an yves substitute. In the future though, I wouldn't buy yves ham. Instead I'd buy tofurkey deli slices or the yves balogna/Turkey. The yves ham has a weird aftertaste that I'm not here for.

Rye & Cinnamon Vegan Pancakes鈦b爛
makes about a dozen 3-inch pancakes鈦b爛
(recipe doubles easily!)鈦b爛

In a large bowl whisk together:鈦b爛
2 cups rye flour (or other whole-grain flour)鈦b爛
4 tsp baking powder鈦b爛
1 tsp baking soda鈦b爛
1 tsp ground cinnamon鈦b爛

In another bowl whisk together:鈦b爛
1 1/2 cup nut milk (or your favorite milk)鈦b爛
1 tbl Apple cider vinegar鈦b爛
3 tbl honey or maple syrup鈦b爛
3 tbl avocado oil (or your favorite oil)鈦b爛
1 tsp vanilla extract鈦b爛

Pour the wet mixture into the dry and stir until just combined. 鈦b爛

Heat a griddle over medium heat. Spray with oil.鈦b爛
Dollop about 1/4 cup of batter onto the hot griddle. 鈦b爛
Flip when bubbles appear. 鈦b爛
Cool until lightly golden. 鈦b爛

Vegan Jamaican chickpea curry: Soak 1/3 cup chickpeas overnight, boil in a mixture of veggie broth and water until cooked then set aside. Chop up 1/2 a small carrot, 1 and 1/4 cup kale, 1/3 an onion, 1/3 a shallot, 1 jalapeno, 1/3 a russet potato, 1/3 a zuchini, and measure 1/2 cup peas. Heat a pan to medium heat and add veggie broth until the bottom is covered. Add the onion, potato, shallot, and jalapeno and simmer until tender. Add the rest of the veggies and Jamaican jerk spice, curry powder, turmeric, pink salt, cumin,onion powder, smoked paprika, and ginger powder as desired. Add the chickpeas, 3/4 cup unsweetened coconut milk, and any necessary veggie broth to the pan and simmer until curry is done. Steam 1/4 cup dried basmati rice with water to serve with the curry. Vegan shortbread biscuits. Mmm delicious and very easy to make!
Ingredients:
200g dairy free butter
300g plain flour
100g Sugar
Put the butter and sugar into a bowl and mush together until it's smooth. I used a wooden spoon. Then pour in the flour and using your hands, mush the ingredient together until you make a dough ball. This bit gets really messy 馃榾 tip: if it's crumbling apart, add some more flour. Once that's done, mould chunks of the dough to whatever shape you want and put it on a baking tray. I made hearts! 鈾ワ笍 Bake in the oven for 12-15 minutes. It was so delicious that I ate one straight away! Wait for it to cool and dust some icing sugar on top.鉁 #yummy #veganbiscuits .

My #Easter brunch yesterday consisted of this awesome vegan meal that has become a favorite of mine and my husband's. It's super easy and gives you that southern #BBQ flavor that who cannot enjoy?鉅

- 2lb carrots, shredded鉅
- 1 large red onion, sliced鉅
- BBQ sauce (our favorite is Sweet Baby Ray's or BullsEye)鉅
- buns or sliced bread鉅
.鉅
- Shred your carrots (my Kitchenaid makes this so much easier) and slice your onion as thick or thin as you prefer.鉅
- Toss together with enough olive oil to coat lightly and evenly.鉅
- Bake at 425 degrees F for about 1 hour or until all is caramelized. Use a spatula to toss around d about halfway through.鉅
- After cooked through, pour BBQ sauce over carrot mixture. I opt for a sticky but light coating, but go as heavy or as light as you want.鉅
- Then place on bun, add some pickles and more onion, a bit a mustard and you're good to go!鉅

Blueberry Vanilla Chia Pudding by @myblissktchn w/ plantbased yogurt & fun toppings!

Recipe for the chia pudd:
2 tsp Blueberry powder, 1dl plain soy yogurt, 1dl plantbased milk (oat), 2 tbsp chia seeds, 1/2-1 tsp vanilla aroma or bourbon vanilla powder, 2tsp agave syrup. Mix all ingredients and let thicken in fridge at least 15-30min or overnight. Another day, another bowl of @traderjoes Cauliflower Gnocchi! This might be my best recipe yet!! Tonight I made it with baby kale and roasted butternut squash!! 馃槏馃槏

I preheated my oven to 400掳. While it was heating up I peeled and cubed a butternut squash. I placed the squash cubes in a large ziplock bag, added 1 Tbs of olive oil, sea salt and freshly ground black pepper, and gave the bag a shake to coat the squash. Then I placed squash on a baking sheet and put it in the oven for 45 minutes. .

When there was 30 minutes left on the timer, I placed the frozen cauliflower gnocchi on a different baking sheet and put that in the oven as well, flipping/tossing the squash when I did. .

When there was about 8 minutes left on the timer, I diced up a small onion. I sprayed a skillet with olive oil spray, and saut茅ed the onion with some minced garlic until soft, about 3 minutes. Then I added a package of baby kale to the same skillet and kept cooking until it wilted. (If the onions start to brown just add a splash of chicken broth to give it some moisture). Once kale was wilted and squash and gnocchi were finished baking, I added them to the skillet as well and tossed everything together before enjoying! 馃憣馃徏

This entire skillet of food is only 15 smartpoints, and it easily makes 3 servings....or 2 very large ones if you just can鈥檛 control yourself like me! 馃槀 It was so delicious I just couldn鈥檛 help it!! Can鈥檛 wait for leftovers tomorrow!! 馃槏馃槵
