These chickpea pancakes are super delicious, full of protein and only take 10 minutes to prepare. You can even mix the batter the night before and they will cook in about 3 minutes. I just can't get enough of chickpeas, and this is a fun and pretty way to eat them.
Put 1 Cup Chickpea flour in a bowl Add 1 Cup water Whisk this together and then add your spices..I used 1 tsp cumin seeds 1/4 tsp turmeric 1/4 tsp red chilli flakes 1/4 tsp cayenne A good pinch of salt 1/4 Cup fresh cilantro
Let the batter rest while you cut up some veggies. I used a bit of radish, and green onions. Use what you have on hand.
Heat a bit of oil in a small frying pan. When it is sizzling hot add 1/3 Cup of batter. Tilt pan until batter is evenly distributed. I like to sprinkle my green onions and radish flecks on top, but you can add them to the batter. Cook over medium heat until pancake turns up at the edges, then flip it and cook for a couple minutes more.
You can prep these a few days in advance and just reheat. We love these just as they are, but you can top with greens, or an egg. You can even make them into crepes and fill them with roast veggies or other fillings. You really should make these beauties. Hope you are all enjoying your Tuesday. ❤️Debra
