Our #Toronto location is featuring a beautiful prosciutto wrapped halibut filet June 18-23rd. The halibut is served with steamed mussels in a roasted tomato broth accompanied with fingerling potatoes, sautéed asparagus and oyster mushrooms. Just a whisper of truffle oil automatizes the dish. The composition and weight of the dish makes it suitable for many white wine options. @allisonvidug encourages a local Chardonnay by @pearlmorissette winery in Niagara. The 2016 Cuvée Métis is vibrant, textured and balanced. This wine is a rich gold colour with an expressive bouquet of orchard fruit and terroir. The wine has beautiful length on the palate, making it an elegant pairing at the dinner table.
