Some years I’ve made cauliflower “potatoes”, other years parsnip “potatoes”… but this Thanksgiving our mashed potatoes are… potatoes(!) … but with a whole bunch of sauteed kale, olive oil, rosemary, and garlic mixed in. I’m so obsessed with this Creamy Vegan Butternut Squash Pudding! It tastes like the best pumpkin pie filling ever (IMHO ☺️). The freshly roasted squash has so much natural sweetness that it only requires a bit of maple syrup and coconut cream to make it a super luscious dessert. Just roast, blend, and chill! The city outdoor markets are ending for the season, but not before I snatched up a beautiful haul of colorful ingredients. Here’s what I brought home from the Green City Market last weekend, with the convenient & flexible help of @Uber (because parking is neither convenient nor flexible in Chicago!). What would you make with this mix?
