Whether you love asparagus or not, try cooking it in a new way! It’s so delicious right now while it’s in it’s peak season. This broccoli salad has become a quick favorite around here - I originally intended it as a picnic/cookout salad, but it turns out it’s great for weekday meal prep lunches because the broccoli has the chance to marinate longer in the dressing. It’s tastiest on days 2 and 3! It’s mixed with chewy cranberries and topped with smoky tamari spiced almonds & pepitas (which, heads up, are addictive - they will become your favorite snack). Make pico de gallo and put it on everything! I scoop it into my breakfast burritos (3 posts back), put it on tacos, burrito bowls, enchiladas, etc, etc. If I have any leftover, I swirl it into my scrambled eggs for a migas-like breakfast the next morning. 🍅💚 (Recipe link in profile)

Sometimes you just need a good go-to green dressing/sauce that can go on everything. 💚 This cilantro lime dressing is tangy, it’s herbaceous, and it’s so yummy drizzled over summer salads, grilled veggies, and more. The best part… it can be made 3 ways! Once you make the dressing, use it as-is, add Greek yogurt to make a creamy ranch-like dressing (pictured in the middle), or add avocado to make a thick, creamy green sauce (pictured left). Sweet corn tamale with mole colradito, piled with poblano, butternut squash, and kale at @doveschicago. Jack and I eat dinner together nearly every night, yet sometimes we crave slightly different foods. Even with the same base ingredients, where I see a salad, he may see a burrito… so today’s blog post is my solution to that!
