New on the blog: Shiitake Maki with Carrot Ginger Sauce... because veggie sushi rolls are fun to make at home - you can get creative and fill them with whatever you want! These are made with brown rice, roasted shiitakes (almost like the shiitake bacon thing), cabbage, cucumber, avocado and a tangy carrot-ginger dipping sauce that was leftover dressing from the kale salad that I posted on Monday. Raise your hand if you still love kale salad! I feel like it’s been forever since I’ve made a big kale salad and this one with lots of rainbow-like colors, crispy chickpeas, avocado, and creamy carrot-ginger dressing makes me feel happy from the inside out. A gooey mess to eat, but so worth it. 🥰❤️

Raspberry Chia Jam:
2 1/2 cups frozen raspberries
1 1/2 tablespoons maple syrup
1/2 tablespoon fresh lemon juice
1/2 teaspoon vanilla extract
pine of sea salt
1/4 cup chia seeds
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Simmer everything except the chia seeds in a saucepan over low heat, stirring occasionally, for 15 minutes. Add the chia seeds, let cool, then chill for at least 1 hour. Scoop onto PB toast and top with hemp seeds and coconut flakes, if you like.

This book has such a refreshing message. It’s not a diet plan or anything like that - it’s simply a plan (with lots of great tips) to help you get in the habit of cooking daily. I especially love this section from the intro: “When you COOK90, your days become healthier because cooking is an inherently healthy behavior. Cooking becomes faster, because daily cooking is a cycle in which each meal naturally connects to the next. And your food simply gets better, because you’re practicing cooking three times a day.”

Hi everyone. I’ve noticed a lot of new faces around here lately - welcome! I thought it might be fun to take a moment to introduce myself.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
My name is Jeanine and I’m that girl, feeling awkward, futzing with the sink while trying to get at least one decent photo of myself for the new book :). Here are a few other random facts about me: I dislike bananas unless they’re in bread (or muffins), and I’ll eat anything else except for cantelope. Last year, we moved from Austin to Chicago, but I still eat breakfast tacos most days. In college, I thought I would become a painter, which is probably why I’m really into colorful food. My pet peeve is trying to photograph brown foods (3 fails at a really ugly, yet delicious, curry last week… we’ll get there). ⠀⠀⠀⠀⠀⠀⠀⠀⠀
I put ice cubes in my wine but I didn’t really want anyone to know that. We have two shiba inu pups - one is chill, one is crazy, but both love to eat anything that falls on the floor (kale stems, raw pasta, and uncooked rice are some odd faves).

While I spend my days cooking, creating recipes, and taking pictures of them, by far MOST of my time is spent washing dishes and cleaning these darn countertops. You’d be surprised at how many spoons I can mess up trying to get one shot of soup. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
If I could bring one ingredient to a desert island with me it would be lemons of course(!) because I can make anything taste good with a little lemon (and maybe a little olive oil as well).
