The sun is still shinning so I have a new and delicious BBQ recipe!
Spicy peanut tofu & skewers with herby mayo & salad in a spinach wrap. Seriously tasty!! I used super creamy @sacla_uk vegan mayonnaise to make a gorgeous herby mayo. The perfect addition to my wraps.
I used my classic spinach crepes for the wraps (on my blog). See below for the skewer and herby mayo recipes! *
Skewers; *1 Courgette sliced *1 pack organic firm Tofu *1/2 aubergine cut into medium chunks *1/4 cauliflower cut into florets
Marinade; *3 tbsp Sriracha *2 tbsp tamari *1 tbsp toasted sesame oil *1 tsp maple syrup *2 tbsp smooth peanut butter *1/2 tsp garlic granules *
-Mix the marinade ingredients in a large tub. -Stir in the tofu and cauliflower. Marinade for at least an hr. -When marinated, skewer the tofu and veg and then pop on the BBQ or griddle pan- turn frequently until cooked through. *
-Mayo with herbs & lemon; *4 tbsp @sacla_uk mayo *1 tbsp dill chopped finely *1 tbsp mint chopped finely *1 tbsp coriander chopped finely *Squeeze lemon juice *Pinch sea salt -Add all the ingredients to a jar and mix well.

Layer the herby mayo on the warps then top with the skewers and lots of salad.
