Have you ever had banana #softserve? Recipe below! @PlantBasedonaBudget and I *had* to include it in our new #vegan desserts e-book. It’s made with a single ingredient (), tastes like #icecream, and is actually #healthy. You can dig in for #breakfast, #dessert, or even as a late night #snack without a drop of guilt. RECIPE: In a food processor or Vitamix blender add frozen chopped #bananas. You’ll need at least two bananas for this to work. You may be fighting your appliance in the beginning, but keep going—it will be worthwhile! Pulse or blend until you have a thick, creamy ice cream. Scoop into a bowl or ice cream cone, garnish with your favorite toppings, and enjoy immediately. Feel free to mix it up by adding peanut butter, cocoa powder, or fruit! I’m so excited to be working on a mini-documentary with @plantbasedonabudget! We placed an ad on Craigslist asking if anyone who currently eats a “Standard American Diet” would be interested in an extreme diet makeover: vegan style. We were shocked by how many people responded! So many folks want to get off of medications, or make sure their kids no longer have high blood pressure or high cholesterol, or have been wanting to reclaim their health but have no support system. Of all the people who shared their stories with us, @raulllyyy seemed PERFECT! He's motivated, he wants to gain knowledge of #healthy lifestyle and lose some weight in the process. Right now, his diet consists of mostly #fastfood, but he is so excited to change that. So far, we are blown away by his commitment to this challenge! @ToniOkamoto and I will be documenting his life this whole week. This is a photo from his last fast food meal before his week of #vegan! Yesterday we went to the doctor to get a pre-vegan blood test and went grocery shopping and had Raul’s first plant based meals! Today we’re teaching Raul to meal prep and watching the #documentary@WhatTheHealth Join us all on social media as we help Raul transition to healthier living! Have you ever had #zoodles (zucchini noodles)? I made these @CecesVeggieCo zucchini noodles last night in a marinara sauce with veggie sausage and plant-based parmesan and it was SO #healthy and YUM. New recipe! Chickpea “tuna” salad is one of my fave #lunch recipes. Did you know that tuna fish accumulate mercury in their flesh from our polluted oceans and can be extremely detrimental to our health? This recipe shows how easy it is to cut them out of the equation and enjoy a much healthier #protein rich tuna salad made from plants! I hope you’ll give it a try. - Michelle Recipe:
1 can of chickpeas, rinsed and drained
1/4 cup of vegan mayo
1/4 cup of diced tomatoes
2 celery stalks, diced
1/3 cup of dill pickle, diced
2 cloves of garlic, minced
2 tablespoons of red onion, diced
1 tablespoon of Dijon mustard
1/4 teaspoon of salt
1/4 teaspoon of black pepper
1 pinch of cayenne pepper (optional)
Chickpea Salad Instructions:
1. Drain and rinse one can of chickpeas (or two if you're doubling the recipe). 2. In a large bowl, roughly smash chickpeas using a potato masher or fork. Leave them a little chunky for optimal texture.
3. Add all remaining ingredients and mix until thoroughly combined.
This week has been one of the craziest of my life, filled with wonderful surprises and emotion, and honestly, I’ve been so wrapped up in it all that I kept forgetting to EAT! Luckily I have a box of these @MadeGoodFoods bars in my pantry and OH my goodness, they are deeeelish and bring me right back to my childhood Chewy bar days Except they’re totally #organic and #vegan (of course)! They’re super chewy and sweet and yummy, and you can find them at tons of grocery stores and even on Amazon! The “chocolate chip #granola bar” is my personal fave. So hey, if you need a quick #plantbased snack to carry around in your bag or want a treat to bring with your #lunch, you might love these!
