Isn’t it beautiful that the most colorful, vibrant, healthful foods can also be the most delicious? At the #plantbased retreat I’m at this week I’ve been re-inspired by fellow creators and the scrumptious power of simple plant foods like cabbage, avocado, açaí, pitaya, and beyond that can be transformed into savory, sweet, filling, nourishing meals (with a little creativity). This #BuddhaBowl is made with steamed broccoli, radish, purple cabbage, #avocado 🥑 (duh), black sesame seeds, and cauliflower fried rice. 😍 I made the #caulirice using riced cauliflower 🍚 from @cecesveggieco stir fried with chopped onion, garlic, red pepper flakes, and soy sauce. Simple, healthy and delish lunch! Top with sriracha for a spicy kick! - Michelle 👩🏼🌾

Want to get the perrrrrfect buttery avocado 🥑 every time? The best tip is to keep them on the counter until they get soft and ripe, and then pop them in the fridge until you’re ready to eat them. The fridge will prevent them from ripening further and getting brown. Once you stick them in the fridge, they’ll stay perfect for a solid week, at least. .
