TOMATO SAUCE WITH CHEDDAR AND ZUCCHINI. Cheddar and zucchini are my favourite combination. They go well also in tomato sauce Serves 2:
1. Warm 1 piece of garlic in 4 table spoons of olive oil. Once the aroma unfolds, remove. Add 2 cans of tomato and boil over 30 minutes.
2. While boiling, cut some zucchini and sear in olive oil.
3. Boil 200g pasta like spaghetti 1 minute shorter that the original boiling time.
4. While boiling, finish the sauce: Chop 100g cheddar cheese. Put the cheddar, the zucchini, herbs like oregano and basil, pepper and salt into the tomato sauce. Turn the heat off. Stir and melt the cheddar into the sauce.
