Can we make substitutions for things? Yes! We don’t do it often but sometimes a treat happens when we get some amazing ingredients. Most of the time I don’t agree with making “paleo” substitutes for things that for the most part should only be eaten occasionally (like daily desserts and breads and other things that aren’t very nutrient-dense)...so we happily live off meat, fish, fowl, vegetables, fruit, some nuts and seeds, and we eat a wide variety of cuisines within those parameters. When I make a paleo version of something THAT is my occasional treat, because to eat the real thing can have some dire consequences (he with Hashimotos and me constantly battling gut permeability and some fun fun reactions).
So with the above in mind, here was my Sunday dinner treat:
Wild shrimp sautéed in butter atop some @Cappello’s paleo fettuccine, some wild chanterelles sautéed in butter and garlic that were foraged by @swampyappleseed, some organic tomatoes from @canewater_farm and also a few from our garden, with our own basil ...and wait for it....vegan mozzarella.
I made vegan mozzarella using cashews, garlic, lemon, tapioca flour, olive oil and salt. It’s bizarre stuff, but stringy like mozzarella...we will see what it’s like after it sets up in the fridge a bit further!
