Garlic Butter Mushrooms

Serves: 3-4
.
Ingredients:
.
-one medium container of whole mushrooms, washed & de-stemmed
.
-3 tbsp minced garlic
.
-1/4 cup vegan butter
.
-sea salt
.
-Chili powder
.
.
Instructions:
.
1.Line a large baking sheet with foil. Add mushrooms in single layer cap down. Set oven to 350.
.
2.In small mixing bowl add butter, microwave for 20-30 or until liquid. .
3.Add garlic and two to three dashes of sea salt and chili powder. Mix well. Pour mixture over mushrooms. Try to fill mushrooms with mix as best as possible.

4.Bake for 25 min. Check mushrooms to see if browned. Bake for 5-10 more minutes or until browned evenly.

Cherry Tomato Roasted Cod

Servings: 4-5 .
Ingredients: .
-1 cup cherry tomatoes, rinsed and halved .
-1 full filet of cod .
-1/3 cup sweet white wine .
-1 tbsp blood orange olive oil .
-sea salt .
-black pepper .
-dried parsley .
-onion powder .
Instructions: .
1.Place foil over large baking pan. Set oven to 325. .
2.Place cod into pan and add cherry tomatoes over top. .
3.In small mixing bowl, mix remaining ingredients then pour over cod and tomatoes. Bake for 25 min. Check fish to determine flakiness (use fork to see if meat pulls away easily in center). Bake 5-10 min longer or until fish is fully cooked.

Honey Chili Glazed Roasted Carrots

🥕🥕🥕🥕🥕.

Servings (as a side): 4-5
.
Ingredients: .
-2 lb. bag of whole carrots, peeled & cut diagonally in thirds .
-3 tbsp honey .
-1 tsp chili powder .
-2 tsp minced garlic .
-2 tsp olive oil .
-salt .
-pepper .
.
Instructions: .
1.Line a large baking pan with aluminum foil, lightly oil to prevent sticking. Set oven to bake for 425. .
2. In a small mixing bowl, add garlic, honey, chili powder and 1 tsp of olive oil. Mix together. .
3.Place carrots on baking pan, in one layer. Drizzle mixture over carrots, being careful to avoid as much spillage on pan as possible. Sprinkle salt and pepper over carrots, as desired. .
4.Bake for 20 minutes. Remove pan and shake so carrots flip to different side. Bake for another 20-25 min or until lightly browned and soft. Remove from oven and allow to cool. .
5.Eat either immediately or save for later.

Ok guys, this my new FAVORITE meal. It is SO delicious and not only does it taste good, it looks good! I get at least 2 co-workers asking me what I'm eating each time I bring it to work. You'll be thanking me for this one for a long time! 😉 .

Mediterranean Shrimp Wrap
.

Servings: 1 .
Ingredients: .
-1 tomato basil wrap .
-7-10 shrimp, peeled and deveined .
-red pepper hummus .
-Frank's red hot .
-cucumber slices,5-6 .
- red onion, about 2 oz. chopped .
-feta crumbles, 1-2 oz. .
-kalamata olives, 5-8 .
-sweet piquanté peppers, 4-5 chopped .
-olive oil, to coat pan .
Instructions: .
1.Cook shrimp in a small saute pan with a little bit of olive oil to coat the pan and several dashes of Frank's red hot until shrimp is cooked all the way through, about 3-5 minutes on medium low heat. .
2.In a small bowl, add about 1 generous tbsp of hummus and several dashes of Frank's red hot. Mix together then apply generously to wrap. .
3.Add cucumbers, feta, red onion, kalamata olives, peppers and shrimp. Fold wrap to hold the contents and enjoy!

Udon Noodle Miso Bowl 🍲 .
.
Servings: 1 .
Ingredients: .
-1 packet udon noodles .
-1 cup baby spinach .
-3 tbsp soy sauce .
-1/2 cup mushrooms, chopped 1/2 cup shrimp, peeled & deveined .
-1/2 cup broccoli, chopped .
-1 cup miso organic broth .
-drizzle of sesame oil .
Instructions: .
1.In a medium/large saute pan, add sesame oil and set to medium/low heat. Add in mushrooms, broccoli and soy sauce, allow to cook for 5 minutes. .
2.Add in shrimp and spinach. Cook until shrimp is pink and spinach is wilted, about 3-4 minutes. Remove from pan. .
3.Fill saute pan about half way with water and bring to boil. Add in udon noodles and cook for 3-4 minutes or until tender. Drain. .
4.Add noodles and vegetables back to pan and add in miso broth. Set heat to medium/low and allow to warm for 5-10 minutes. Serve immediately or store in refrigerator for later.

Ingredients: .
-1 cup uncooked shrimp, peeled and deveined .
-2 cups mushrooms, chopped .
-garlic powder .
-sesame oil .
-3 tbsp soy sauce .

Instructions: .
1.In a medium sized saute pan, drizzle about 1 tbsp of sesame oil and set heat to medium/low. Add mushrooms and allow to cook for 5 minutes. .
2.Add in shrimp, garlic powder and soy sauce and allow to cook until shrimp is pink and fully cooked. .
3.Remove from heat and serve or store for later.

Two Minute Oatmeal (and I really mean it 😉)

Ingredients:

-1/2 cup old fashioned oats

-1/2 cup water
.
-cinnamon
.
-sea salt

-honey
.
-1/2 🍌 .

Instructions:

1.Add Oats, water & pinch of sea salt to microwave safe bowl. Stir. Microwave for 45-60 seconds. Stir. Microwave for 15-30 more seconds depending how thick you like it.

2.Add cinnamon, honey & banana to top.

YORKSHIRE PUDDING PIZZA 🍕// made this for my birthday dinner and promised to write up the recipe for those who asked so here it is - recipe link in my profile! If you don’t already know what a Yorkshire pud is, it’s basically crepe batter baked into puffy little cups usually using a muffin tin or something similar. They’re akin to popovers (for anyone in the US) or Dutch baby pancakes 🥞. Usually they’re an *essential* part of a Sunday roast but here I’ve gone and filled a giant one with pizza toppings because when did cheese ever NOT improve something. Bonus cos it’s actually a lot quicker than making real pizza so you should maaaaybe give it a go 😉🤷🏼‍♀️

Edamame Spaghetti With Garlic Roasted Broccoli

Ingredients: .
-1 serving of edamame spaghetti .
-olive oil .
-sea salt .
-1 cup chopped broccoli .
-2 cloves garlic .
-1/2 cup marinara sauce .
.
Instructions: .
1.Prepare edamame spaghetti by bringing water to boil in a medium saucepan. Boil for 3-5 minutes or until tender. Drain water then immediately drizzle olive oil over noodles. Add marinara sauce and set to low heat to keep warm. .
2.Set oven to 450. Line baking sheet with aluminum foil and spread out chopped broccoli evenly. .
3. In a small sauce pan, add 3 tbsp olive oil and minced garlic cloves. Heat until fragrant, then remove from heat and pour over broccoli. .
4.Shake pan to evenly disperse oil over broccoli then roast for 20-25 minutes. When complete, pour over top of edamame spaghetti and enjoy!

I drunk made the @alisoneroman cookie dough last weekend and only put 100g chocolate in it 😭 then left it in the fridge all week because I was preoccupied by my bday pancakes. Baked Zucchini Fries

-3 zucchinis .
-3-4 tbsp Parmesan cheese

-2 tbsp panko bread crumbs

-pinch of sea salt

-pinch of garlic powder

Instructions:

1.Slice zucchini into ‘fries’. Set oven to 400 degrees. Line baking sheet with parchment paper.

2.Toss ‘fries’ I olive oil. Mix dry ingredients in mixing bowl. Toss ‘fries’ in mixed dry ingredients then spread them out evenly on baking sheet.

3.Bake for 25-30 min or until golden brown. .

Roasted Cauliflower Steaks

This recipe is a quick prep & bake. .
Ingredients:

-1 Head Of cauliflower .
-3 tbsp olive oil
.
-1 tbsp tahini
.
-3 dashes cumin
.
-3 dashes sea salt

-3 dashes black pepper
.
-3 dashes garlic powder
.
-3 dashes chili powder
.

Instructions:
.
1.Wash head of cauliflower and remove stems. Set oven to bake at 450 degrees.

2.Mix olive oil & spices in small bowl. .
3.Place aluminum foil over baking try. Place cauliflower in center. Pour mixture over cauliflower and rub mixture in well.

4.Bake for 45-60 minutes or until tender.

5.Slice into large ‘steaks’ and enjoy!

I found a gem of a taco restaurant recently. I never thought I'd find a taco joint that caters to a plant-based diet/vegetarian/pescatarian but I did! We ordered a few types of tacos: falafel, ahi poke and fried paneer. Original, delicious and way more food than we expected. A win on all fronts. 🙌🏼

Gingerbread Cardamom Snowflake Cookies are on the menu tomorrow @lavenderandhoneykitchen ‘s Winter POP-Up Market. They remind me of my Amish Aunt and the ginger cookies she kept in a little tin on the shelf in her Butler’s Pantry. I would sneak in at night while the grownups were visiting in the living room, feeling my way across the squeaky boards of that shadowy space lit only by the dim glow of the kitchen ‘s kerosene lamp. My hand would reach into the tin, lift the familiar wax paper and curl around a fistful of ginger goodness. Then I nibbled them in quiet glee while the lamps sputtered and the voices droned on into the night.

I had a go at mince pie cinnamon rolls this week but realised when I sliced them up that they were less ‘rolls’ more ‘folds’ 🤔. I haven’t baked in a while and definitely feeling like I’ve lost a bit of my groove, which needs some remedying if I’m going to be responsible for the Christmas showstopper 😊. For these, I used @izyhossack’s vegan cinnamon roll recipe for the dough and filled them with @meridianfoods mince pie filling. If you can make them more aesthetically pleasing than I did, give them a go. They still tasted so good ❤️. Who else is making their Christmas dessert this year? I’d love to know what you’re planning to make!

#53 Squash and crispy kale bowl with ginger miso dressing (@izyhossack) 🤗 Quick and easy to put together after a long shift at work in which I wasn’t abused/accosted/hugged at all by any customers!
