Day 110: Dope man, move that dope and move that dope and move that dope (Delicious, Obsessional Plate of Essential Vitamins).
Last night I cam to the conclusion that I love myself, I truly love me, which is something I cannot remember saying. I know I have a lot of flaws and things I need to work on but I think I am pretty great and my body definitely thought this meal was!
My recipe was inspired by #lovingitvegan, @candichinwe and @anchoredlifewithindia.
A little more than 1 cup of coconut milk (18 tbsps)
1/2 of a lemon (juiced)
Clove of garlic
1 cup of raw cashews
2 tbsps each of: nutritional yeast and red onion
1 tsp each of: green chillies, crushed red pepper, black pepper, paprika
2 tsps of: turmeric (for the yellow color)
I paired this sauce with asparagus, raw yellow bell pepper, sweet potato rice from @bouldercanyon green onion and cilantro. The cheese sauce had plenty of flavor and a nice kick . I loved it with the sweetest from the rice and bell peppers. IF YOU HAVE BEEN AFRAID TO TRY A PLANT BASED RECIPE, JUST GO FOR IT! YOU MIGHT BE A LITTLE NERVOUS BUT MORE THAN LIKELY IT WILL BE...AT LEAST DECENT IF NOT AMAZING.🤩
