1 sweet potato
1/8 tsp salt
1 tsp olive oil
1 avocado
1/2 lemon
1 tomato
1 tbs hemp seeds
Steps:
1. Slice the sweet potatoes into thick slices. Bake the Sweet potatoes slices at 350 F for 25-30 minutes or until they are fully cooked
2. In a bowl, mix the avocado, lemon, and oil together until well combined. Add in the tomatoes, salt, and hemp seeds and continue to mix until well combined.
3. Add this avocado mixture on top of the baked sweet potatoes

I always have to keep some type of banana bread in the fridge for smothering in nut butter, cutting open an egg over, or topping a yogurt bowl with. and the best recipes IMO are gooey. 😛 like melt-in-your-mouth, gotta have 5 pieces good. that brings me to @eatthegains genius creation: paleo zucchini banana bread

DO IT: preheat oven to 350 and line bread pan w parchment paper. mash 2 ripe bananas + 2 eggs + 1/4 C @califiafarms toasted oats n’ almond milk + 1.5 C coconut/almond flour (she recommends tigernut!) + 2 cups @cuisinart shredded zucchini packed. then add 1/2 tbsp cinnamon + 1/2 tsp nutmeg + 1 tsp each baking powder and soda + pinch of sea salt. bake for 55-60 min until fork comes it clean. ENJOY ✨

Thought I would cook something new up today since this storm has me trapped inside☔️ These are zucchini garlic bites🥒•

Pre heat your oven to 400 degrees, while it’s preheating fill a bowl with 1 egg🥚, 1 cup grated zucchini (make sure to squeeze out all the water💦), 1/4 cup of shredded mozzarella, 1/3 cup of bread crumbs🍞, 2 tbs of chopped onion, 1 clove of garlic minced, 1tbs of parsley flakes, 1tsp oregano, and a some salt and pepper 👩🏻‍🍳 Then roll the mixture into small balls and leave them in the oven for 16 minutes!

Today my roomie and I did day 5 of #bbg which was a full body workout. I’m honestly still sore from day 1 so it was tough to get going but once we started we did well💪🏻 we spent a good 15 minutes after stretching, which I recommend you do after every workout to increase mobility, to prevent tears and strains and more! •

On the days I have to leave my house in five minutes for school, I always have chia pudding with me on the go. 🏃‍♀️ I love how simple they are to make, yet they taste sooo good and healthy! It's kind of blurry to see in this pic cause I just took it out of the fridge. 😅 But here are the dEATs:
- 1 tbsp chia seeds
- 1/2 cup unsweetened almond milk
For toppings, I added a sliced banana, strawberries, blueberries and granola. I also added @amazinggrass protein superfood pure vanilla flavor
I love how quick and easy this recipe is! 👌
