i honestly didnโ€™t think iโ€™d like these as much as i do because nuts are life (the jokes are endless) but iโ€™m obsessed ๐Ÿ’ฅ iโ€™ve been having one as an afternoon snack and it keeps me satisfied right until dinner.
the deets:
5 softened dates
1/2 c shredded unsweetened coconut
1 c sunflower seeds
3 tbsp chia seeds
3 tbsp hemp hearts
2 tbsp ground flax
4 tbsp melted coconut oil
4 tbsp melted coconut butter
6-8 tbsp plant based milk (i used cashew)
2 scoops @vitalproteins dark chocolate blackberry peptides
1 tbsp cacao (optional)
1 tbsp maca (optional)
1 tsp vanilla extract
2 tsp cinnamon
sprinkle of pink himalayan salt
how to: add literally everything into your food processor and let it do the work, scrape the sides down every so often then roll into balls and store in the fridge for up to a week.

1 tablespoon extra virgin olive oil
1 package of @cecesveggieco sweet potato
salt and pepper, to taste
1 teaspoon garlic powder
1.5 cups marinara sauce (I like Raoโ€™s)
1/2 teaspoon dried oregano
1.25 cups shredded mozzarella cheese
12 turkey pepperoni slices
2 tablespoons chopped basil, to garnish
1 tablespoon grated parmesan cheese

๐Ÿ•Directions๐Ÿ•.
1๏ธโƒฃPreheat the oven to 425 degrees and grease a 10โ€ cast-iron skillet or square casserole dish.
2๏ธโƒฃPlace a large skillet over medium-high heat and add in the olive oil. Once oil heats, add in the sweet potato noodles and season with salt, pepper and garlic powder. Let cook for about 5 minutes or until noodles begin to soften.
3๏ธโƒฃTransfer the cooked noodles to the casserole dish and pour over the tomato sauce. Sprinkle the dried oregano over the tomato sauce evenly and then layer over with the mozzarella cheese.
4๏ธโƒฃPlace the pepperoni slices on top in rows. Bake in the oven for 20-25 minutes or until cheese melts through and is slightly golden brown.
5๏ธโƒฃRemove from the oven, garnish with basil and parmesan cheese.

Feeling overwhelmed with gratitude today and it's truly bittersweet. I shared yesterday in my IG stories something that is hard for me to admit, but something that's on my heart to share because I know SO many people are going through it.

When I started coaching my husband and I were well over six figures in debt. And this weekend we will be sitting down to pay off over half of what we owe, and we will be completely debt free by the end of the year because of this little "coaching thing" I said yes to.

I was terrified of what people would think. I was afraid I wouldn't be good enough or "fit" enough to help others. I wasn't sure of the steps I needed to take, but I trusted in my ability to make it happen, and more importantly I gave my worries to God and he has guided me every step of the way.

I had been in a rut with sweet potatoes the last few weeks...so I took a slight hiatus and now I'm baaaack! ๐Ÿ˜‚ Started this sweet potato-themed week with some ๐Ÿ  toasts & today...sweet potato banana muffins! ๐ŸŒ ๐Ÿ  ๐Ÿž
I adapted the recipe for banana bread (a few posts back) and I'm already a fan. These muffins remind me of fall-with the pumpkin-y color and fall spices and are perfect for this cold not-so-spring weather!

How to: ๐Ÿ‘‡๐Ÿผ
โ€ข2 super ripe bananas
โ€ข1 small sweet potato, steamed
โ€ข2 eggs
โ€ข 2 cups oatmeal
โ€ข1 tsp baking soda
Spices: 1 tsp (or 2) cinnamon, 1/2 tsp cloves, nutmeg, a few pinches of salt
~optional toppings: pumpkin seeds, chocolate chips, walnuts, etc .
Directions: preheat oven to 350ยฐ
Blend all ingredients in blender until smooth
Pour into greased muffin pan (should make about 12)
Bake until cooked through (mine took about 35 min)

Mixed leaves, tomatoes, tuna, olives, nuts and olive oil. Simplicity at its best by my mum. Guys, it was so funny seeing her trying to make the salad look nice so that the picture "came out well for that thing where you put your food" (aka Instagram ๐Ÿคฃ๐Ÿคฃ). My parents are not still very convinced about this "healthy lifestyle trend". In this part of Spain, the more the better. And it made sense...a century ago when most people here worked the land and had very physically demanding jobs. But now...ehem ehem, not needed any more. Plus we know much more about nutrition and the importance of a balanced diet. They are coming to terms with this...veeeeeery slowly ๐Ÿ˜… But I am still trying! I'd like to hear your own experiences. Oh my gosh, you guys!!!! I just have to SHOUT OUT to all of you in the BBG community. You all inspire me and motivate me to be the best version of myself! When I started this program, I had no idea all of the support I would receive; I just liked how challenging the workouts were. And when I started this Instagram page, I had no idea how much love and support I would feel. I just thought it would be good for me to hold myself accountable and I might have a handful of followers. But NO! Two months into this program, I know I can lean on ALL OF YOU with questions I have or pictures of your transformations to motivate me to have a transformation of my own! I am so thankful for this program and for all of the amazing and strong woman in this community.

Guac toast with scrambled eggs: I could seriously eat this for every meal ๐Ÿ’› I usually use one whole egg and two egg whites for my breakfasts, but I was out of egg whites today, so I used two whole eggs. Whole eggs have been demonized in the health community in the past, but in reality, eggs are an excellent part of a balanced diet! Egg yolks contain tons of nutrients, so you miss out when you cut out whole eggs in favor of whites. Plus, yokes give your scrambled eggs a yummy, creamier consistency! ๐Ÿ˜‹ I usually do my mix of one egg plus whites because this combo has more protein and fewer calories than two eggs - since I have specific calorie and protein goals, the blend fits better into my macros. I definitely will be swapping in two whole eggs every now and then, though, because these scrambled eggs were the best Iโ€™ve had in a while! ๐Ÿคค
