The best damn sandwich I’ve ever made is brought to you by myself and @vitacost It all starts with a fresh slice of toasted sourdough bread followed by a creamy lemon herb mayo then stacked with fried crispy feta cheese, sweet and savory maple bacon, juicy tomatoes, and crisp lettuce. FRIED FETA AND MAPLE BACON BLT WITH LEMON HERB MAYO
INGREDIENTS (makes 2 sandwiches)
-4 slices maple bacon
-4 slices sourdough bread
-1 8oz block Feta cheese
-1 large egg, beaten
-1 cup panko bread crumbs
-1/2 cup flour
-1 tsp lemon zest
-Juice of 1/2 lemon
-1/4 cup mayo
-1 large tomato cut into slices
-canola or sunflower oil
-1 green onion, chopped
-1/2 tbsp cilantro, chopped
1) Cook bacon in a skillet over medium heat. Once finished, remove and set to the side. In a small bowl add mayo, green onion, cilantro, lemon zest, lemon juice, and pinch of pepper. Mix well, set to the side.
2) In a deep saucepan or cast iron skillet, add an inch of canola or sunflower oil. Turn heat to medium high.
3) In 3 separate bowls, add flour, eggs, and bread crumbs. Cut your Feta cheese block into 2 pieces. Dip each piece into flour, then egg wash, then the bread crumbs. Coat them well, add to skillet to fry. Fry the cheese until golden brown, about 1 1/2 minutes per side. Remove and allow to cool.
4) Toast your sourdough bread then begin to assemble. Add a generous portion of lemon herb mayo to your bread followed by the fried feta, bacon, tomato, and lettuce. Enjoy!
