When I know I’ve got a busy week ahead, one of my favourite weekend preps is a bunch of β€˜egg mcmuffins’, my way. I can grab a couple for brekkie and be done and dusted (although I tend to eat them with some fermented veggies and green sauce)

These babies are just sautΓ©ed leek and ham in happy fat with whisked eggs, a splodge of coconut milk, all cooked off in muffin tins for 20 minutes in a moderate oven.

Starting the week off with these colourful dessert jars for breakfast πŸ’•πŸŒΊπŸ’•

Here we have a super healthy and filing chia pudding with apple, berries, cinnamon, 100% organic maple syrup and coconut milk πŸ˜‹πŸ˜‹

Looking like a busy week ahead so I prepared a few of these yesterday so I have a healthy breakfast ready in the morning πŸ˜‰
.
You can make them easily by making overnight chia, but I like to give them a lot of flavour - so this is how I make them πŸ˜‰ also swipe left πŸ‘ˆπŸ‘ˆ to see more photos on process 😊

Caramelise 2x diced apples in coconut oil with some strawberries (or any other berry of choice) for 3-5 min 🌺 then add almonds and pepitas stir for 1 min 🌺 then add 100g of chia & 800g of favourite nut milk (I used 1/2 almond & 1/2 coconut) stir then simmer for approximately 5 min, add in maple syrup and cinnamon ❀️ once again stir 🌺 turn off heat and cover - once cooled pop them into to mason jars, top with more berries cover and leave in fridge for when you need πŸ’ƒπŸ»
All you need to do in the morning is add a dollop of coconut yogurt & boom πŸ’₯ breakfast is served πŸ˜πŸ‘ŒπŸ˜

Super immune boosting properties, this delicious chicken and fresh spring vegetable broth has a subtle Asian flavour, and you can whip it up in 15 minutes! (Add an extra 5min for chicken on the bone). My kids love it too.
Ingredients: 🌟4 skinless chicken thighs, on bone if possible 🌟2 carrots, chopped in rounds 🌟3 spring onions, chopped 🌟5 black pepper corns 🌟1 clove garlic, grated 🌟generous 3-4cm knob ginger, grated 🌟knob of grated fresh turmeric 🌟4 cups chicken broth or stock (I have homemade chicken broth in the freezer or organic brroth powder at all times. Fresh is ALWAYS best!) To finish ... 🌟Handful Fresh Parsley, mint or coriander, chopped roughly 🌟 3-4 cups Greens: zucchini noodles, shredded cabbage or kale, peas, asparagus, spring onion tops etc work well 🌟Juice 1/2 large lemon, or to taste 🌟Splash tamari sauce, to taste

IT’S SMOOTHIE TIME.
When I’m hungry.. I’m huuuungry.. and I hate having to wait like 20mins to eat. Smoothies are a great way for me to get around that.. super tasty and healthy and real quick.
I love having banana.. to sweeten things up, berries.. for the antioxidants and the taste of course and spinach for the fibre. Every thing is frozen so I chuck it in the cup.. add almond milk and go.. super delicious and super quick.. great snack material or breakfast on the run.

Fueling the start of a big day the right way πŸƒ. Perfectly crisp 'scrambled eggs' without the dairy component. Avocado, spinach, capers and homemade tomato relish for a bit of tang and spiceπŸŒΆοΈπŸ…. Tomato relish is so simple and much better if made from scratch compared to the ones of the shelf with loads of sodium, sugar and additives.

Its a simple and slow process in which you can take a back seat overnight after salting the onions, tomatoes, capsicum and garlic together in a bowl. The next day you can drain the liquid from the bowl that the salt drew out. Then placing the mixture in a pot of boiling malt vinegar for about 10minutes then dropping to a low simmer for the remaining 50minutes (stirring occasionally). After the hour has passed, add curry powder, mustard powder and chilli if you like to turn up the heat for another 5 minutes. Drain some liquid if you think its a little watery or thicken if you desire. Otherwise you can then jar or blend for a smooth mixture and store in sterlised glass jars.
