When is hot and there is no time to cook I make this fruity ceviche, so good and inspired by my friend Kate @holajalapeno thanks to her I’m now a fan of melon in ceviche so so good. this one is a non fish ceviche because that is what I’m the mood of today but you can easily add some haddock . Also don’t you think tostadas are the taco of the summer?
Melon-heirloom carrots ceviche tostadas with habanero, red onion, spring onion, loads of lime juice, EVOO, a drizzle of apple cider vinegar, avocado , freshly chopped cilantro , maldon salt and pepper, super simple, delicious and fresh what more do we want! Oh yes don’t forget the blue corn tostadas with a smear of Greek yoghurt
