While not technically a three ingredient cocktail, Joaquin Simo's Sidecar is featured in @robertosimonson 's 3 Ingredient Cocktails in the sidecar section. I first had a good sidecar at the bar at @peninsulagrill in Charleston, SC. I tried to recreate it at home, but could not figure out why it was so good there whereas mine fell short. I finally asked the bartender why my 1:1:1 drink of cognac, lemon juice and Cointreau did not match his. He explained that, first, he reduces the ratios of lemon juice and Cointreau and ups the cognac. Second, he adds a little simple syrup which gives the drink a better balance.
Similarly, Joaquin Simo's version increases the portion of cognac and adds sugar. "I don't want the drink to taste thin or watery halfway through," Simo states, so he "bumps up the sugar to give up a little more fat.” As Simonson notes, the result has "a roundness, a sort of luxurious texture, and all three elements are balanced.” . .

3/4 oz #pierreferrand #drycuracao
3/4 oz lemon juice
1 bar spoon of demerara syrup
Stir and strain into a coupe glass.
