Wanted to write a witty caption about having breakfast for dinner but it's a little cliche these days! But indeed, I am a big fan of "breakfast" for lunch or dinner - BECAUSE meals like this beauty are full of healthy fats, protein & juicy green veg. I've used egg yolks only for my scramble (yolks are the most nutritious part of the egg, and although they have more calories the yolk is typically easier to digest than the white and has tons more benefits for hair, skin, nails and weight management). The bacon is organic and nitrate free - which means you get to enjoy the tastiness and protein without any of the nasty by-products and toxins of regular pork. The kale, spinach & mushrooms are sautéed in coconut oil (because coconut oil is one of the better oils to cook with, as its high "smoke point" means you can heat it up quite high without the oil turning rancid or losing its health benefits through heat exposure).
