Woke up extra early because I was so excited to make this recipe and I had to catch a 7:30am train... this single shakshuka skillet was inspired by @rachaelsgoodeats recipe posted on her blog! She is one of my biggest inspirations and influencer of me creating this account. Hope everyone has a fabulous Monday!
Shakshuka for one:
1/3 cup chopped mushrooms
1/3 cup chopped red pepper
1/4 cup chopped onion
1/2 can organic diced tomatoes
1/4 cup water
2 whole eggs
1. Sauté the mushrooms, pepper, and onion in a skillet (I used ghee) for about 5-7 min
2. Mix in the diced tomatoes and water. Let everything simmer for about 8-10 min
3. Create two wells in the sauce and crack each egg into a well. Keep an eye on them until the egg whites are fully cooked! I placed a lid on it for 1-2 min to help the process.
I loved that I could eat this straight out of the skillet! Would be great with some extra spices or even hot sauce on top, but I was too much in a rush to remember. Let me know if you try it out (: xoxo D

I'm attempting to improve my nighttime/morning routine. Mostly my morning routine, because mornings are the WORST! But I got up today with enough time to actually make breakfast! And I had seen a video of #GordonRamsey making scrambled #eggs yesterday so I tried it his way and lemme just tell you - these are the best dang eggs I've ever made!!!! #goodmorning :D
