‘The BASIC’ and the ‘potato hash brown’ from Egghead was suuuper good, loved both of these but i actually intended to get the classic but for some reason my ‘orderee’ ordered the basic. Homemade gravlax will always be my favorite avocado toast topper. 🥑

Gravlax recipe: in a bowl, mix together 1/2 cup coarse kosher salt, 1/2 cup sugar, and 1 tbsp pepper. Cut 3lbs of salmon in half cross wise. Rub the mixture on top of each and add a bunch of fresh dill. Sandwich the two coated sides together. Place in a dish and cover will foil and weigh down with cans. Flip every 12 hours for 3 days. Once ready, rinse fish, and coat with fresh pepper and chopped dill. Then cut thin slices on an angle.
Avocado toast: in a small bowl smash 1/3 avocado with garlic salt and a squeeze of fresh lemon. Spread on toast (my fav is this @traderjoes European bread) and top with gravlax, asparagus, and a poached egg. To poach an egg, add a dash of vinegar to simmering water to hold the egg together. Swirl the water so it moves in a slow whirlpool motion and gently crack the egg in the Center of the pot. Cook for 3 minutes and remove from water.
