Want more protein in your vegan salad? Add sprouted legumes! When you sprout your legumes you increase their absorbable protein AND you essentially turn them into a vegetable that is a living food. Sprouting germinates the seed so it’s bursting with enzymes making it easier to digest (with no gas), and sprouting increases the nutrient content (by removing the phytic acid that blocks nutrients in the non-sprouted bean/dormant seed) making it a great source of protein, thiamin, niacin,Vit B6, pantothenic acid, iron, magnesium, phosphorus, zinc, potassium, fiber, Vit C, Vit K, riboflavin, folate, copper and manganese.
