Chia Trifle on fleek
Chia bluebs jam: 500 gr frozen bluebs, 4 pitted & chopped medjool dates, juice 1/2 lemon or 1 lime, simmer 10 min on medium heat with lit on, add 2 tbsp chia seeds, stirr a couple of times in the following 5 minutes, once cooled store in a jar in the fridge
Chia pudding: 500 ml coconut milk, 6-8 tbsp chiaseeds (depending how firm you like it), lime zest, 6 vanilla drops or vanilla powder, heeped tsp manuka honey or maple syrup, mix (stirr a couple of times in the following 5 to 10 minutes) & let sit overnight in a jar in the fridge
Make Trifle: chia pudding layer (optional mix in a tbsp garden of life vanilla protein powder), passion fruit, (fermented) coconut yogurt, bluebs chia jam, tahini, sprouted seeds or some kind of granola to add some extra crunch
