Great nutrition rarely sneaks up on you. We often have good intentions at the grocery store, only to find a week later that our cucumbers are fuzzy and our peppers are liquefying in the veggie drawer. Instead of throwing money and resources away every week or two when you clean out the fridge, try taking a 10-15 minutes after grocery shopping to prep your produce. .
Whether it’s a snack bag for your kiddo’s lunch, or a reusable container, make your produce convenient and visible. It will surprise you just how much more works into your daily routine. .

My tip today is all about doing “Build Your Own Bars!” Be it a yogurt parfait or oatmeal bar for breakfast (as shown here), salad or sandwich building station for lunch, or baked potato or taco bar for dinner, this is a great way to help pack on variety, pile up nutrients, and promote independence in your child’s eating!

What do you think these two meals have in common?
It's no longer #nationalnutritionmonth but we can #GoFurtherWithFood every month of the year. My host mother used the sauce from yesterday's fajitas (err...I think they were fajitas) to make a potato and veggie dish! Not something I would think to do, but an easy way to add flavor. Would also work with rice! What's your favorite way to repurpose leftovers?

General tips for washing vegetables and fruit :
Most fresh fruit and vegetables have a natural protective coating. So wash them under water just before you are ready to eat or cook them. If you wash them ahead of time, it will speed up how fast they spoil. Leafy greens can be washed and stored a few days before you use them.
The best way to wash vegetables and fruit is under running water. You do not need special products, soaps or vinegar, may leave an aftertaste and don’t kill bacteria or moulds.

Washing leafy green vegetables :
Wash all leafy green vegetables, including pre-bagged greens under cold running tap water. 
For lettuce and cabbage, remove the outer leaves first. Throw away any wilted or discoloured leaves.
Rinse leafy vegetables in a colander, drain (or use a salad spinner) and pat dry with a paper towel or tea towel.

Store after clean and dry. Use within a week.

Wash your hands with hot water and soap before and after handling.

Some people might not call this a salad due to the lack of leafy greens, to them I say, it’s a bowl of cold vegetables, what more do you want from me?
.
If you know anything about me, you know that I’ll take a bowl of vegetables over fresh fruit any day. You’d also know that I’m not a fan of using leafy greens in my salads. I like nutrient, water, and fiber dense vegetables to fill my bowl. I find I feel fuller for longer when I do this.
.
This salad features broccoli slaw from the woohoo section at Kroger (I’m all about saving money guys), chopped bell peppers, and peeled and chopped cucumber. I dressed this salad with vinegar and spices making it an amazingly filling and low-calorie option for this high-volume eater.

Turkey, Brown/wild rice mix, and crispy Brussels sprouts. I swear I NEVER thought I’d like Brussels sprouts in my life until I tried them like this! Olive oil, pepper and Himalayan salt broiled on low until crispy (or baked until crispy, either works) I only like broccoli this way also.. steamed veggies just don’t do it for me. ​At an Aramark Healthcare account located in Williamsport, PA I had the opportunity to implement and execute a promotional event that featured a specialty salad. The event featured a “build your own” Thai Shrimp Salad that included cooked garlic shrimp (served chilled), a kale and harvest salad mix with a spicy sesame vinaigrette dressing. The customers were given the luxury of choosing different toppings to add to their salad including sliced cucumbers, shredded carrots, edamame, and sliced almonds. This salad proved to be a great preview to the types of foods and themes being offered on the new three-month menu rolling out in the following week.
​This project gave me the opportunity to strengthen my cultural competency skills and understand the impact it has on customer satisfaction. My promotional event was executed on a Friday during the days of lent so this led me to choosing a meat-free entrée salad that would appeal to any customers following these religious practices. I received such great and positive feedback from both the customers and management staff on the Thai Shrimp Salad that they are considering featuring it as a special during the new retail menu rotation! Here's a quick, fast and super easy recipe for the egg noodles:
Cook 12 ounces wide egg noodles in salted boiling water until al dente.
Transfer 1/4 cup cooking water to a skillet. Stir in 4 tablespoons butter, one at a time.
Add some chopped parsley and/or dill, a squeeze of lemon juice, and salt and pepper.
Drain the noodles and toss with the sauce.

@lientje_livinglightly: I got this pile of eggplants in my food share and wasn’t sure how to store them so they don’t go bad before I can cook them. 😳 I looked the answer up in this great reference guide, the Waste Free Kitchen Handbook.
I’ll store them on the counter and use them within a week. Storing them in the refrigerator risks browning and off flavors. I happen to have this book from attending a food waste learning event in DC, but you can also look up this kind of advice online.
Did you know that about 40% of food in the US does not get eaten? And that consumers are responsible for more wasted food than farmers, grocery stores, or any other part of the food supply chain?

Mint! We were clearing out our garden for spring planting and we have so much mint. What is your favorite recipe with mint? I’d love to hear your recommendations! So far I’ve made mint tea, thrown mint leaves in water, added some to salad, and added to riced cauliflower. My favorite so far is just minty water. My girls loved pulling it from the garden. They sampled it there too. No pressure or encouragement, they just decided to taste it all on their own.

🍵 Matcha powder: pure, ground form of green tea leaves. It contains tons of antioxidants, especially a catechin EGCg (epigallocatechin gallate) which protect the body from free radicals. 1 cup matcha is about 10 cups of regular green tea. There’s more caffeine than a regular cup of green tea, but it also contains an amino acid called L-Theanine, which has a “calming” effect. Look for ceremonial grade Japanese matcha. There’s also a cooking grade for larger quantities @aiyamatcha

•Buckwheat flour: loaded with fiber, antioxidants, &other nutrients. It’s technically a seed ground into flour so it’s natural gluten free (for anyone concerned). It has a nutty flavor(no nuts, just a nutty flavor) rather than a sweet flavor. You may have to play around with it depending on how sweet you want it, but try to limit any added sweeteners! I chose honey- although it is still an added sweetener, there’s antibacterial/antimicrobial properties &other benefits. Stick to raw/unfiltered, local, or even better..Manuka honey!

❣️RECIPE❣️Blueberry buckwheat pancakes😊
🔹1/2 c @bobsredmill buckwheat flour
🔹1/2 c oats
🔹3/4 c unsweetened coconut milk (or almond cashew/any milk)
🔹2 eggs
🔹1 tsp vanilla extract
🔹1/2 c blueberries (last ingredient, fold into batter)
🔹1.5 tbsp raw unfiltered honey
🔹can add 1/2 scoop protein if you’d like (@vega_team: Vega sport : Berry flavor-great for this)
❇️Additionally, for matcha buckwheat pancakes add 1.5-2 tbsp matcha powder, 1/4 c coconut milk(or water), pinch of pink Himalayan salt, 1 tsp honey❇️

Homemade sauce (instead of syrup): 1/2 c blueberries, 1 tbsp water in a pan-medium heat ~3-5min, mush w/ spatula. Add 1 tsp of water at a time until desired consistency. I mixed in hemp seeds, drizzled sauce, and @crazyrichardspb on top! Note: can add cornstarch for thickness

I had a blast talking to two of my daughter’s classrooms last week for National Nutrition Month! For my 5 year old’s class it started with a little let down because one of the kids thought I said I was a “Magician” instead of Registered Dietitian, so they all got excited quick thinking I could do magic 😂. When I got that straightened out we kept it simple with separating foods into food groups with a felt board/food pics and then had small groups create a balanced meal on the board. For my other daughter in 2nd grade we discussed different food groups and then I had them draw a balanced meal (pic above) which is my FAV because I love seeing what they select and draw! Personal favorite (not pictured) was one boy who was eating shark steak with green beans and grapes! Then I gave them the Academy’s word search for “homework” and have a small reward planned for those that turned it in by Friday. So fun! Making the most of leftover ingredients from this week AND satisfying my #charcuterie craving for a nice patio lunch with Clay. Plenty of protein to fuel a day of fun in the sun ☀️. It seems like these days when I make an omelette it is because I am cleaning out my fridge. Today’s omelette was made with leeks, dill, arugula, a handful of San Marzano tomatoes?, green onions, parsley and stuffed with a little Irish cheese and sautéed turnip greens and kohlrabi greens because I don’t want to waste those- right! My all-time favorite breakfast! Avocado and eggs on toast with a side of fruit 🍇 so simple but so good! Topped it with some red pepper flakes for a little punch 👊🏼Food doesn’t have to be fancy or pretty to be healthy, as this breakfast is loaded with healthy fats and has the perfect balance of carbs and protein. Just what I needed after this mornings workout! Hope everyone has a Happy Saturday!
