Blueberry-Buckwheat Pancakes! AND Oscar the Grouch pancakes (see what I did there?) before ya freak about the green..pause! it’s Matcha green tea powder!
• Matcha powder: pure, ground form of green tea leaves. It contains tons of antioxidants, especially a catechin EGCg (epigallocatechin gallate) which protect the body from free radicals. 1 cup matcha is about 10 cups of regular green tea. There’s more caffeine than a regular cup of green tea, but it also contains an amino acid called L-Theanine, which has a “calming” effect. Look for ceremonial grade Japanese matcha. There’s also a cooking grade for larger quantities @aiyamatcha

•Buckwheat flour: loaded with fiber, antioxidants, &other nutrients. It’s technically a seed ground into flour so it’s natural gluten free (for anyone concerned). It has a nutty flavor(no nuts, just a nutty flavor) rather than a sweet flavor. You may have to play around with it depending on how sweet you want it, but try to limit any added sweeteners! I chose honey- although it is still an added sweetener, there’s antibacterial/antimicrobial properties &other benefits. Stick to raw/unfiltered, local, or even better..Manuka honey!
RECIPEBlueberry buckwheat pancakes
1/2 c @bobsredmill buckwheat flour
1/2 c oats
3/4 c unsweetened coconut milk (or almond cashew/any milk)
1 tsp vanilla extract
1/2 c blueberries (last ingredient, fold into batter)
1.5 tbsp raw unfiltered honey
can add 1/2 scoop protein if you’d like (@vega_team: Vega sport : Berry flavor-great for this)
Additionally, for matcha buckwheat pancakes add 1.5-2 tbsp matcha powder, 1/4 c coconut milk(or water), pinch of pink Himalayan salt, 1 tsp honey
Homemade sauce (instead of syrup): 1/2 c blueberries, 1 tbsp water in a pan-medium heat ~3-5min, mush w/ spatula. Add 1 tsp of water at a time until desired consistency. I mixed in hemp seeds, drizzled sauce, and @crazyrichardspb on top! Note: can add cornstarch for thickness
