SO on this healthy journey I thought I would have to give up Pasta....but I found spaghetti made from Organic Brown Rice and made a Mushroom and Veggie Marinara sauce with lots of Black Olives and made a delicious tasting Pasta and sauce with no salt, no sugar and all natural. (I added the tiniest bit of ground turkey for a little bulk and flavor) Overall it was a hit and still allowed us to get full and stay ❤️ healthy!!

Going to @thescriptofficial tonight in Cork, so took a half day at work. That means i had time to cook a nice dinner for me and Tracy.

Chicken Curry:
🥦Broccoli 🥕Carrots 🌶️Peppers
🌶️Chilli
🥗Mangetout
🍚Boiled rice mixed with supergreens rice (kale, broccoli, sugar snaps)
🍛And low fat curry.

I made enough to last me for the rest of the week for lunch as well. If only the wash up was as easy as eating healthy 😂

Abalone porridge for breakfast 🥣

새벽 비행기 타고 출근하는 남편을 위한 아침밥, 전복죽
꼬박 8년만에 다시 하게 된 남편의 fly-in fly-out 스케쥴 내조하기.
8년전, 세상 물정 모르고 갓 결혼한 새색시였던 난 시집살이 하면서 남편을 매주 월요일이면 새벽같이 일어나 죽을 만들어 아침 먹이고 비행기태워 출근 보냈다.
시부모님과 형님내외분을 모시고 살며 주말이 오기를, 남편이 오기를 일분 일초를 세어가며 지냈다.
큰아이를 임신하고서 입덧으로 고생해도 단 한번도 빠짐없이 남편이 출근하는 날이면 일어나 쌀을 볶고 죽을 만들었는데 어느날 시부모님이 그러더라.
넌 니 서방만 챙기냐.
그 후로는 월요일 새벽이면 나는 먹지도 않을 죽을 3인분을 만들던 기억이 난다, 내가 만삭이 돼서 전쟁을 치르며 분가를 하기 전까지.
아이들 학교 보내느라 힘들텐데 뭐하러 죽을 하냐고 괜찮다고 대충 사먹으면 된다는 남편한테 한마디 했지.
그때랑 비교하면 지금 이건 아무것도 아니라고.
죽 끓이고 나서 드러누워 잘 수도 있지, 누구 눈치 볼 일 없지, 힘들긴 뭐가 힘들어.

그렇게 새벽에 조개라면 입에도 못 대는 남편은 갓 쑨 전복죽을 한 그릇 가득 먹고 갔다.
그 덕에 나도 오랜만에 아침에 빵이 아닌 전복죽 먹으며 서글펐던 그 시절 생각에 괜히 눈물나네.

Ahh exercise. I talk a lot about food choices but I’ve never posted about exercise. Well here we go :). Although I haven’t discussed it much, exercise IS essential to maintain a healthy body and mind! As you know I’m all about healthy eating because food is the building block for every cell in your body. You can’t exercise and think you can eat everything under the sun and have your body function optimally. You also can’t just eat well and avoid exercise. You can do it for a little while, but as we begin to get older exercise is essential to maintain muscle mass, flexibility and boost our metabolism. If you don’t currently incorporate exercise into your daily life start with walking. Then build on that and try to do it for at least three weeks in order to develop a habit. After a while it’ll become second nature and you won’t want to miss a day. Trust me, it’ll happen! If it happened for me, it’ll happen for you! #mygreenfork

Four different vegan meals and the nutrition info for each one! All are highly nutritious, rich in protein, and also easy to prepare!
🔽
Meal #1:
- 7oz romaine lettuce
- 1 medium tomato
- 4 kalamata olives
- homemade hummus (4 oz chickpeas, 1 tbsp lemon juice, 1/2 tbsp grapeseed oil, 2 tbsp nutritional yeast flakes, dash of Himalayan sea salt & pepper, plus some water to blend smooth)
- 8 oz tofu, cooked until crispy (no oil needed)
- 2 tbsp just ranch by Hampton Creek

Meal #2:
- 5 oz whole wheat pasta
- 8 oz marinara sauce
- 4 oz salt-free tomato sauce
- 1.25 oz minced tvp
- 2 tbsp nutritional yeast flakes
- 4.5 oz broccoli
- salt & pepper
FYI: this is so easy to make. All you have to do is put the dry tvp in the tomato sauce and let it sit on medium heat, stirring occasionally, until tvp is soft.

Meal #3:
- 3 oz brown rice, 1 tbsp lemon juice
- 8 oz spinach
- salt & pepper
- homemade hummus (8 oz chickpeas, 2 tsp grapeseed oil, 4 kalamata olives, 2 tbsp nutritional yeast flakes, salt & pepper, plus some water to blend smooth)

Meal #4:
- 2 small Ezekiel tortillas, toasted
- tofu “egg” spread (8 oz tofu, 3 tbsp nutritional yeast flakes, 1.5 tbsp just mayo by Hampton Creek, tbsp lemon juice, salt & pepper)
- 11 oz strawberries
- walnuts, approximately 6 halves

That’s it! These are some of my go-to healthy meals. As you can see I’m not afraid of calories. There’s nothing to be afraid of there. We need calories to survive, to gain muscle, to become better versions of ourselves. It’s all about the nutritional value behind those calories. I cannot recommend the Cronometer app enough. Start tracking your nutrition and you’ll get the hang of it sooner than you think! Adopting a healthier lifestyle doesn’t have to be hard.
