For vegan chutney: Soak handful cashews for 3-4 hours. In a grinder add these soaked cashwes, add 1 tbsp sesame seeds, 2 tbsp coconut(fresh or dried), 1 chilli, 2 garlic pods, some pin Himalayan salt, squeeze of lemon juice. Grind it all together. For tadka: Add 1tbsp coconut oil in small bowl/tadka bowl. Add mustard and jeera(1/2 tbsp each), 5-6 cury leaves, 1/4 tsp asafoetida.
