What do you do when you have a bunch of roasted pumpkin leftover after making scones? Turn it into soup! This is a new one for me - Moroccan pumpkin & chickpea soup with dukkah & greek yoghurt on top! I ate it twice today so you know it’s good 👍🏻 Here’s the recipe:

Ingredients -
1/4 Kent pumpkin, roasted
400g can chickpeas
1 onion, diced
1 tsp olive oil
500ml chicken or veggie stock (use more if you prefer your soup thinner)
1 tsp Moroccan spice blend (make your own or buy one)
What to do -

Heat oil in soup pot on medium high.
Add onions and cook until translucent.
Add pumpkin, chickpeas, stock and Moroccan spices and cook for 5 minutes.
Using a stick blender, pulse until soup is your desired consistency.
Serve with a dollop of Greek yoghurt and a sprinkle of dukkah on top!
Enjoy!

When you learn to ignore all the fads out there of what you should and shouldn’t be eating and misinformation, nutrition becomes really really easy.
How did it take me so long to realise this? As Michael Pollan said - eat food, not too much, mostly plants.
For everyone who struggles with the right way to eat and how much to eat, it’s as simple as above. Eat real food - eat when hungry and tune into your body so you can stop when full. Mostly plants - you will be getting an abundance of essential vitamins and minerals that your body needs to thrive. And don’t be so hard on yourself - we live in a society where the weight loss industry is a billion dollar industry - they thrive on your confusion and need for instant results. Just slow down, get back to the basics and focus on health not aesthetics 🙌 my lunch today consisted of kale, chickpeas, quinoa, avocado topped with a squeeze of lemon 🍋
