i started to love seitan tbh
my basic seitan recipe works literally for anything nuggets, cutlets, burgers just add the spices you like and boil it .
you will need:
• 1 tbsp vital wheat gluten (48)
• 1 tsp chickpea flour (8)
• 1/2 tsp nutritional yeast (4)
• 1 tsp veggie stock (4)
• 1 tbsp almond milk (1)
• 1 bay leaf (0)
how to prepare:
• mix all your dry ingredients except the stock and add your seasoning of choice, i usually go for black pepper, a little salt, cayenne pepper, paprika, garlic and onion powder.
• slowly add 1 tbsp of the almond milk and mix the dough until it becomes elastic
• but the dough in your boiling stock with the bay leaf for some extra flavour, boil for about 30 minutes to an hour
• after boiling the dough will expand 2 or sometimes even 3 times, remove from water and pat dry
• now prepare as you like or freeze for storage
