Okay I don’t really know HOW to make eggplant parm look pretty BUT have no fear cause this vegan version is BANGIN. It does take some time and multiple steps but I swear it’s worth it!! 1. Line a pan with foil and then pour a little EVOO on foil. slice 2 medium eggplants, place on pan & use a evoo SPRAY to coat the tops of eggplant. Bake at 425 for 20 mins. Flip the eggplant and bake for another 20.

2. Once done, let eggplant cool.

3. Layer a pie dish with sauce (I used Arrabbiata sauce) then a layer of your eggplant slices, then a layer of seasoned bread crumbs, a layer of shredded @followyourheart mozzarella and @violifeamerica provolone, a layer of chopped basil(no stems) and roasted red peppers (dry them once you take them out of jar. This is v important) then repeat the layers all over again- (eggplant, sauce, bread crumbs, cheese, veggies, eggplant, sauce, cheese)
4. Wrap dish in foil and bake at 350 for 20-30 mins or until warmed completely through.

Okay y’all I want to get real for a moment. I want to talk about Body Image and why I hate the scale. I don’t care if you are a girl or a guy, we’ve all struggled with it. You think you aren’t strong enough or thin enough. You may think your arms are too flabby or your legs aren’t defined enough. Everyone has that something that haunts them with negative self talk. I’m here to tell you: I see you, and I hear you. This first picture, I thought I was finally skinny enough, pretty enough, and my waist was finally small enough. This picture (excuse the ridiculous face) is from five years ago, right before College. I used to dream about being back to this body. This body was before two ankle reconstructions, traveling abroad (don’t regret eating my weight in European food), heavy hitting depression and anxiety, and it seemed like a dream to be back at this weight. But, approximately at the end of February I decided I NEVER wanted to be back to that body. I am EIGHTEEN, yes 18, pounds heavier today than I was that day. But I am SO much healthier at this weight than I ever was then. Reasons why I hate the scale— it NEVER tells the full story. I would eat the bare minimum (what I thought was healthy) and work out two to three times a day. Now, I struggle to eat as much as what my nutrition plan calls for, and I work out for 30-60 minutes a day 6 days a week. Do I still fight negative self talk sometimes? Yes. But do I know I am continually getting stronger both mentally and physically? Yes. I wouldn’t trade the strides I have made towards a healthy lifestyle for anything. Here is to fighting negative self talk and issues with body image. You are strong enough, beautiful enough, beyond capable, and you should simply strive to be the best version of you. ❤️❤️

So this is what yesterday's lunch looked like. Turkey slices and leftover course chopped pico that I had made for Tuesday's fish tacos.

Sometimes meal planning doesn't go as planned. This week has been one of those weeks where meal planning just did not work out. I've been meal prepping for many years. I don't beat myself up anymore when I have weeks like this, learning from it and how I can improve on it for next time there's weeks that are so crazy busy.
I didn't look at yesterday's lunch as a fail but as a learning opportunity on ways to improve for next time and to help everyone else out that also lives a crazy busy schedule. Knowing what you default back to when you're super hungry and trying to find substitutes to avoid that is very key. That discussion is for another time.
What did I learn from yesterday's makeshift lunch? That pico de gallo wrapped in turkey slices is really easy, super delicious, and why have I not done this before?

Never beat yourself up when you have meal prep fails. It's a learning process and those of us who have been doing it for years still fail at it but we get back up, learn from it, and come out stronger and better on the other side.

With living a healthier lifestyle and meal prepping I have started cooking whole chickens in my instantpot. Wow talk about a game changer. It's quick and the chicken comes out so juice.

Then after I get all the meat from the chicken I use the bones to make chicken bone broth. Again a process that use to take hours on the stove is now super easy with the instantpot. And the broth is good enough to drink 🤣
.

In my program, we’re tackling the topic of how to have the weekend be a time where you aren’t losing traction towards reaching your goals, and you’re still socializing and LIVING! 🕺🎈

‼️Cause your main purpose in life IS NOT to lose weight.‼️

⚠️I would say this was the most pivotal skill I had to learn to keep the weight off.

Here are 5 tips (I still use to this day!🙋🏼‍♀️) to come out of the weekend HAPPY + that much CLOSER to your GOALS:

1. Is it your birthday, a planned special event, a holiday? ✅ENJOY (binge + guilt free) 🍰🎉
.
2. Use sugar free mixers for alcohol, drink champagne or wine 🥂🍾🍷
.
3. Get active on the weekend - book a class with a friend, go for a walk with fam, play some sports 🏋🏼‍♀️⛹🏼‍♀️(it won’t only burn calories for you, it will keep you connected to you goals and help you avoid ‘checking out’ on the weekend)
.
4. Eat nutrient dense, lower caloric foods in the AM if you have a social event in the evening (ex. egg whites + veggies, protein shakes) 🥒🍳🥦
.
5. Say what you’re working towards out loud to your company - you’d be surprised who wants to support you, or even who you will inspire! 💫

So as per usual my Friday night was consisting of good food and 8:30 bed times because granny life. I would like to think that I could also be a party animal but I’m really not convinced. ⠀

You wouldn’t think oats would work on a sweltering morning like this but these sure did😍 I’m not sure I’ve said before but I’m NOT a fan of yoghurt but if it’s low fat, I can tolerate it much more. And, in overnight oats, I would even go as far as saying I love it!! And @tescofood have started selling low fat AND lactose free yog so I could FINALLY have the best flavour overnight oats - peach 🍑. Topped with raisins, dried apricots, and @thechiaco black and white chia seeds. Delish😍

We love our @thule chariot... It's seriously made me love walking again. Our other pram is awesome but as the kids grow was getting hard to manoeuvre around our hood... this one is next level PLUS you can hook it up to a bike.

heat oven to 375F and whisk together all wet ingredients in a medium bowl
•1 flax egg (or regular egg if not vegan)
•1/3c unsalted tahini
•1/3c vanilla almond milk
•2 tbsp avocado oil
•1 tsp vanilla
next, combine all dry ingredients in a separate bowl, then add to wet ingredients
•1c almond flour
•1/4c coconut flour
•3 tbsp coconut sugar
•1/2tsp baking soda
next, stir in a handful of vegan chocolate chunks and spoon batter onto a lined baking sheet (batter will be sticky- that’s okay!). Bake cookies for 13 minutes then top with sea salt. enjoy!

I opted to do a little (ok - a lot! :)) meal prep before going to the yoga conference & show this year. When I went in 2017, I found that finding healthy and fast food was rather difficult. Thankfully I was only there for 2 days in 2017.

This was not something I wanted to repeat this year; especially because I was there for all 4 days!
.
Thanks to Pam, I had healthy meals that were ready to go when I came back after a long day. I had easy breakfasts everyday. I also had lots of snacks and had crackers to go with the hummus that I made.
.
Better sill - I also got great ideas for my trip to Denver! I was able to make more protein bars and energy balls yesterday to take with me on the flight and nibble on while I'm in Denver.

CLEAR THE FRIDGE |•••
this week’s win: not wasting any fridge goods 👏🏾 whipped up a cilantro dressing for my salmon (🎥recipe in last week’s post). i gotta say, this dish made me want to start making salmon (vs steak) more 🤭

make-your-own spicy cilantro dressing:
▪️1 cup chopped cilantro
▪️75 ml jasmine rice vinegar
▪️3 cloves garlic
▪️1 tbsp curry powder
▪️1 tbsp @traderjoes chili lime
▪️1 red chili pepper (up to you)
▪️food processor everything, chill, serve when ready
(defo a kick to this, so if spicy isn’t your thing, remove the 🌶️)

I really wanted my @chillycow cookies and cream ice cream but I’m saving it for tomorrow. This Greek yogurt fruit bowl and some collagen didn’t go as far as hitting the spot, but it did fill up my tummy. Can’t wait for ice cream tomorrow!! 🤤

300 calorie salmon dish! Yummo! 3oz pan seared salmon over 1 cup of roasted eggplant, zucchini, and tomatoes with 1/2 cup of cannellini beans. This is such an easy meal. Line a pan with aluminum foil and spray with cooking spray. Cut veggies and place on pan. Top with salt, pepper, and seasonings (I used Italian herbs). Place in oven at 375 degrees for 35 minutes. While this is cooking, coat salmon with lemon juice and seasonings (I used salt and Italian seasoning). Put 1 tablespoon of olive oil in a skillet and let it get hot for a few minutes. Then, place salmon skin side up in the skillet. Cook for a few minutes and flip. Cook for 3 to 5 more minutes and remove when done. That's it! Plate it up!
