One thing Iโ€™ve learned over the last 2 years is that it is SO important to get those greens and veggies in, no matter how you do it. ๐Ÿฅ—Youโ€™ll often find lettuce or spinach tucked into my plate with no dressing simply because I know I just need to eat it... and now I love undressed greens (or eating them with bites of other food)! ๐Ÿ’š Happy Tuesday, friends!

Beef stroganoff tonight was SO good and way healthier than the highly processed (albeit delicious) version I had growing up. Everything was cooked in the same pan: beef, onion, mushrooms, garlic, seasoning, then beef stock and noodles to simmer, and finished with herbs and sour cream. Finally getting around to a late breakfast! I threw together this oatmeal because we are out of eggs and it did not disappoint! While this is #notwhole30approved it is still a very clean breakfast after reintroduction! Added protein is really important with oatmeal. It's mostly a carb so it really needs to be balanced with a fat and protein. The almond butter and walnuts took care of that for me. ๐Ÿ˜‹ #bonappetit .

Lunch today served with a side of regret ๐Ÿคฆ๐Ÿปโ€โ™€๏ธ๐Ÿ”I made these burgers the other night with ground beef I had in the freezer (from a sale at @sprouts ) but, sadly, itโ€™s not so friendly on the macros ๐Ÿ˜ญThis meal was 660 calories, primarily due to the 80/20 beef. And now Iโ€™m not nearly as full as I ought to be after that many calories ๐Ÿ˜ฉ Lesson learned... Iโ€™ll stick to lower fat beef or turkey or chicken burgers. Iโ€™m hoarding my last carbs and calories for tonight bc Iโ€™m making teriyaki chicken with ACTUAL RICE OMG WHAT IS THAT and broccoli and edamame ๐Ÿ˜Š

Good morning ๐Ÿ˜Š I pulled some whole wheat banana pancakes ๐Ÿฅžout of the freezer for a quick breakfast and topped with strawberries and 1 Tbsp @wholesomesweet cane syrup for 357 calories. We did it! ๐ŸŽ‰๐ŸŽŠ We finished our first round of #whole30 as of last night and I couldnโ€™t be more proud of what we accomplished within the last 4 weeks! We ate clean, we cut out sugars, preservatives, alcohol, dairy and stayed on track while working out and improving our cooking skills! We enjoyed trying out new recipes, cooking and making EVERYTHING from scratch, and just getting more creative and innovative with not only our cooking but also our meal prep!

I LOVED how whole30 changed my attitude towards food. This is the best effect it had on me. I come from a past with lots of struggles with diets, food, and eating in general and whole30 just opened my eyes to a healthy, fun, and challenging lifestyle! I felt less bloated, never too full too sick after a meal, and the maybe nicest side effect was that I lost some weight and just feel a lot more slender now!

I did enjoy my cheese today, I did enjoy some fried chicken, fried chips and chocolate today, Iโ€™ve been waiting for this day for a long time, but I know my body will react differently to the โ€œnewโ€ foods now. I want to enjoy food, even foods and items that are #notwhole30approved. So I am testing the kiddos this week and someone brought snacks and I gave in aaaand regretted it ๐Ÿ™ˆ Not because of the calories, not because itโ€™s a snack but because I gave in because I was tired and stressed. They have soy, gluten, dairy and who knows what else. The kids saw me eating it and were shocked because they know I am working on my health.
