Raouls: I have been trying to get to this burger for the past couple of years. It’s been rated the best burger in NYC and the #2 burger in the country for the past couple of years. The issue is timing: on weekdays you have to show up at the restaurant before 515 (opens at 5) to sit at one of the 9 seats at the bar. There are only 12 burgers each night, and they are gone by 530. Get a drink: grill doesn’t open til 530. Order burger at 530. Start eating 550. This burger is ridiculous. You will start cursing to yourself while you are eating (“holy sh!$#!). The seven and a half ounce brisket blend burger, coated in peppercorns and kosher salt, is sautéed to a beautiful crust in butter. The patty itself is 90s level. Then there is the cognac a poivre sauce: it ups this burger to one of the greats. The challah bread beats out even my favorite potato bead. The triple cream Saint Andre brings a lush flavor. Finally the watercress, slivered red onion, and cornichons bring acidity and crunch.
