Speedy Bircher muesli - perfect set up for the day! Traditionally, oats should be soaked overnight but I'm rarely organised enough for that so I do a cheat's 5 minute soaking in the morning. Simply soak the oats either in apple juice or a mixture of cold water and lemon juice. Leave for 5 mins or more before adding grated apple (or pear), Greek yoghurt, drizzle of honey or maple syrup, berries and toasted almonds (or other nuts). Other tasty additions include a spoonful of nut butter, handful of chopped dried fruit (apricots, dates etc), spoonful of fruit puree. Cinnamon Apple Oats
1/2 cup steel cut oatmeal
1 1/4 cup almond milk
1/2 tsp cinnamon
1/4 cup apple sauce
1/4 cup @naturespathorganic hemp granola
2 tbsp date crumble
Simmer oats, almond milk and cinnamon in a small sauce pan for approximately 10-15 minutes or until oats have fully softened. Top with goodies!
2 cups dried and pitted dates
1/2 cup raw almonds
1/4 cup raw coconut
Pulse in a food processor until mixture is finely chopped together.
