Loaded Breakfast Cookies
If you’re looking for an excuse to eat thick chocolate chip cookies for breakfast (you really don’t need one but...), here’s a recipe for you!
These cookies are loaded with protein, contain fruit, veggies, a source of healthy fats, are high fibre AND contain chocolate. They’re basically everything your body and soul needs in the morning, ESPECIALLY when paired with a strong cup of coffee
30g pea protein powder (I used vanilla @happywayau pea protein)
30g almond meal
20g oat flour (oats blended into flour)
10g coconut flour
50g zucchini, grated and drained of excess liquid
1 egg, whisked
10g dark chocolate, cut into choc chips
5g almonds, chopped into pieces
1 tsp baking powder
Preheat oven to 180 degrees celcius.
In a large mixing bowl, add almond meal, pea protein, flours and baking powder. Stir to combine dry ingredients together.
In a separate bowl, mash your banana and add the grated zucchini.
Whisk through the egg, and pour these wet ingredients into the bowl with the dry ingredients.
Continue stirring while adding in the dark chocolate and almonds.
Using your hands, start to work with the mixture to form a dough
Roll mixture into 8 even sized balls and place on baking paper. Flatten softly.
Bake for 15-20 minutes, and allow to cool on a cooling rack to firm up before eating!
Serves: 8 cookies (~50g)
