Last night we used our season passes to Lagoon (a cool amusement park in our area) - rode just a few rides, but our main event for this visit was to go do these fun old fashioned pictures. My family did this when I was a kid, and it is one of my favorite memories. We had a blast doing them!! And got a few priceless shotsπŸ˜‚ And then as a bonus we ran into cousins - so fun!!

Right now a lot of my coaching income goes toward the bonus stuff. One of the reasons I started coaching was to have that extra money to provide experiences for my family. Things like travel, theater tickets, lessons, and fun experiences like this one. With a family of 7, those things can add up pretty fast!

Day 2: ALL the weights todayπŸ’ͺ🏻 Loved the circuit format! So far I’ve counted 5 couples in my group doing this program together - how cool is that?! Not all of our husbands officially check into the group which is totally fine, but at least they join us for a sweaty selfieπŸ˜‰ - and they are doing the work right along with us! With 5 kids, time one on one is rare for Gabe & I. So 30 minutes in the morning is pretty sweet!!

Day 1 is done and both of us LOVED it! The workout went by super fast - weights, HIIT & core. I can tell already that this will be a great program for everyone. Gabe and I are at totally different fitness levels. I just finished 2 rounds of a pretty intense 80 day program. Gabe has been dealing with a pinched nerve & back/neck/arm pain for the last 3 months and hasn’t been able to work out. -
But it worked super well for both of us! You choose weights that will challenge YOU. The cardio intervals can be modified or you can go all out. -
Both Gabe & I are excited about only 4 days a week! I’m going to use my rest days for running, hiking, & yoga or stretching. Or maybe I’ll even rest completely! Going to see what my body needs.

Seared Scallops with Walnut Basil Pesto. Quick, quick, quick but oh so impressive right?!πŸ˜‚
I overheard Lisa from @owlshollowfarm tell a customer about grasshopper nibbled basil so less πŸ’° but still wonderful for pesto and πŸ›ŽοΈπŸ’‘. On my way home from @pepperplacemarket I picked up some sea scallops and knew dinner was planned. The key to scallops being beautifully caramelized isn’t flour 😱. It’s a super hot cast iron pan ( @lodgecastiron if you don’t have one get three!), super dry scallops and not over-crowding them cause they will poach rather than sear. Seriously quick...dry your scallops with paper towel and let them sit covered with paper towel at room temp while you heat pan (up to several mins). Season scallops with salt & pepper. Add olive oil to hot pan and sear 1 1/2 - 2 mins (don’t move them!). Add a little butter to pan, and using tongs turn them searing other side 45-60 secs (up to 90 seconds if plump!). That’s it! Pour that gorgeous brown butter over them while you cook next batch. I topped mine with walnut basil pesto (recipe will go up on our blog also easy) and basil microgreens from @ironcityorganics. I served these beauties with a fresh tomato NiΓ§oise salad (blog too and i will post pic soon!). πŸ€—

CHICKEN AND HAM CALZONE πŸ•πŸ•

I have seen lots of people make these before so I gave it a go and they really are as good as everyone says they are. They are SO easy to make and SYN FREE (using your healthy extras)

Ingredients:
Chicken
Ham
Weight Watchers Wraps
LOW FAT grated cheese
Tomato puree
Mixed Herbs
Veg of choice to fill
1 Egg
*1 x WW wrap as your HEXB or 6 SYNS*
**40g low fat cheddar as your HEXA or 6 SYNS**

. Firstly pre cook small chicken pieces and set aside . Cut up fillings of choice ready to fill your calzone and wisk one egg in a bowl ready to egg wash . Spread Tomatoe puree over each wrap leaving enough room around the edge for the egg wash
. Sprinkle mixed herbs over the Tomato puree
. On half of the calzone put your toppings and cheese - don't overfil . Egg wash around all of the edge and then fold in half and crimp around the edge using a fork
. Egg wash both sides of the calzone
. Spray an oven tray with @frylighthq and both sides of the calzone to ensure they do not stick
. Put in oven and cook for 15 minutes at 200Β° or until golden brown

On such a warm summers evening, #quickdinners are sometimes the best. In this case, shop bought fresh green #ricotta #tortellini with cracked #blackpepper and coarse #pesto , finished off with a drizzle of #pastawater . As a side, I made a #tomato #basil #mozarella #salad with #cucumber and #olives (see next photo). #quickfix

Edit: We shared a pack, and 1/2 a pack of this tortellini has 29.7g of carbs, which is within the β€œ40-60g per meal” recommended by #diabetesuk (according to my diabetes nurse). This was a rare treat, and I normally try and stay away from carbs in evening meals (or go for those with #lowgi ). After this meal, I still ended up having a #hypo of 3.2 because I tried to account for the tomatoes in my salad as well when calibrating my injection pen. Top tip which worked for me: Eat about 150g of #watermelon fresh out of the fridge (if you have it) - worked a treat as #hypotreatment: 100g of watermelon contains 8g of carbs. #t1d

Summer nights call for refreshing, light foods. Baby boy had some leftover parmesan pasta, strawberries, a yogurt drink, paΓ³ de queijo (Brazilian cheese bread made from tapioca flour), avocado, spanakopita, and of course some watermelon also! β€’ Roast a red pepper and chop up a little jar of sun dried tomatoes. β€’ Cook some farfalle (the cute little pasta bows), or fusilli works just as well. β€’ While that’s cooking gently heat the pepper and tomatoes with a few handfuls of spinach β€’ Once that’s wilted, add the cooked pasta, pour in a dash of cream (you can use vegan cream if you need to keep this vegan) and mix it all together. β€’ If you eat cheese some torn mozzarella can be added or you could sprinkle some nutritional yeast flakes and voila!

Healthy Butter Chicken πŸ— Swap out your Indian takeaway for this delicious and healthy version at home 🀩 β €β €β €β €β €β €β €β €β €β €β €β €
Ingredients:
400g Chicken breast
1 white onion
2 tbsp Cumin
25g lighter unsalted butter
4 tbsp Curry Powder
2 tbsp Paprika
1 tbsp Tumeric
400g chopped tomatoes
150g 0% fat Greek Yoghurt (FAGE)
1 pod of chicken stock
Salt and Pepper
Flaked almonds (optional) β €β €β €β €β €β €β €β €β €β €β €β €
Method: β €β €β €β €β €β €β €β €β €β €β €β €
In one pan cook chicken in about half the spice mixture and with 1/2 the butter, on a medium heat. In another small frying pan, fry the onions with the remaining spices, generous salt and pepper and then add the chicken stock, 100ml of water and the rest of the butter. β €β €β €β €β €β €β €β €β €β €β €β €
When the chicken is cooked through, add the chopped tomatoes and bring to the boil. Bring it to a simmer and add the onion mixture. Cook for a further 10 mins, tasting and adding extra spices as necessary. β €β €β €β €β €β €β €β €β €β €β €β €
To finish, take off the heat, stir in the Greek yoghurt and top with flaked almonds. Serve with some basmati rice and optional Naan bread.

What’s for dinner on a hot July evening? β˜€οΈ Chicken lettuce wraps of course! πŸ₯— A healthy delicious carb free dinner that your whole crew will love.
This recipe is a huge winner! πŸ‘
Can easily be doubled for a crowd!
1 Tbsp olive oil
1 lb. ground chicken
2 cloves garlic minced
1 Tbsp grated ginger
1 onion, diced
1 cup mushrooms chopped
1/ 4 cup hoisin sauce
3 Tbsp sweet chilli 🌢️ sauce
2 Tbsp soy sauce
1 Tbsp rice wine vinegar
1 Tbsp sriracha ( optional)
1 8 oz can of water chestnuts drained and diced
3 green onions thinly sliced
Small bunch of fresh cilantro chopped
Handful of chopped salted peanuts
Chopped red hot peppers 🌢️ for added kick in the pants!
Iceberg or butter lettuce leaves separated.
Heat olive oil in a frying pan and add ground chicken to cook. Drain excess fat. Stir in garlic ,onion ,mushroom ,
hoisin and red chilli and soy sauces, rice wine vinegar ,ginger and sriracha until onions have become translucent .
Stir in chopped chestnuts and green onions until tender. Simply spoon filling into butter lettuce leaves or iceberg lettuce leaves and top with extra chopped green onions, cilantro and chopped peanuts and chilies.

You know you’re a foodie when you even make your frozen Amy’s veggie burger into something fancy πŸ€£πŸ€¦πŸ»β€β™€οΈπŸ˜‹. Amy’s frozen California burger patties, on a bed of baby spinach, pickled jalapeΓ±os, sliced avocado, organic ketchup, amazing dill pickles, a side of sweet mustard #NomNomSauce, apple caraway sauerkraut, and then I baked some cheese crisps real quick for crunch! Simple, baked wild salmon. With garlic powder, fresh dill from my garden, some olive oil, smoked paprika, a squeeze of lemon, and sea salt. And the cauliflower is a mix of organic rainbow cauliflower, with some olive oil, garlic powder, and a little sea salt. I baked it all on 400* F for 20 minutes about.
