It’s served cold so is perfect for a summer lunch or dinner.
The base is some brown rice (about a cup full of cooked rice or 30g uncooked).
Let it cool and add some sweetcorn, adzuki or black eyed beans, corn, chopped tomato, spring onion, green beans and lightly cooked broccoli.
Season the chicken with 1/4 tsp each of oregano, thyme, paprika, cayenne pepper and 1/2 clove crushed garlic and grill or bake until cooked (about 15-20 minutes).
