Chomp into a cloud of sweetness with this #Lychee Fritters recipe!

20 oz Dynasty Lychees
¾ cup flour
½ teaspoon baking powder
⅛ teaspoon salt
1 cup coconut milk
¼ cup flour, for dredging
Powdered sugar (confectioner’s sugar) for topping
Step 1: Heat frying oil in a skillet at 375 degrees. Test the oil by dropping a little piece of batter in to see if it sizzles and rises quickly, that’s what you’re looking for.
Step 2: Sift the flour, baking powder, and salt. Then, mix in the coconut milk. Whisk that up until blended.
Step 3: Drain the canned lychees and place them into a bowl, coating them in the ¼ cup flour. Cover them well, until they’re soft and dry. Then, dip them into your batter and then, into the hot oil to fry. Only fry a few at a time, as to not clutter your skillet. Fry them until they are golden brown and crispy. Set them to dry on paper towels before serving.
Step 4: When they are all fried, place them on a serving plate and dust them with powdered sugar. Serve right away while still nice and hot.
